Hi. We are having a chicken/elbow pasta casserole, so what goes with it? Of course with two guys for supper, the casserole just is not enough.

How about a salad or broccoli on the side? I can actually taste it... :cloud9:

Green Salad is always a good go-to side dish when you can't decide what else to make (and what I almost always pair with any kind of pasta dish).

Beyond that, any sort of vegetable, unless your casserole already has a lot of veggies in it. With a chicken and macaroni dish, I'd be inclined to go with something green, like green beans or broccoli.

Another option, even easeir is canned fruit like peaches, mandarin oranges or fruit cocktail. Or of course, fresh fruit slices, like melon.

What is supper? Lunch, dinner, in between? Yes, I'm being serious. Funny this thread is here because my pappy, DBF and I were discussing supper and the lack of there actually being a "supper"; it is either lunch or dinner. :confused3

Is supper really that much of a regional term? Here in CT, I never hear anybody say "Dinner". The meal that you eat in the evening is Supper.

I grew up in NH, and it was "supper". We moved to PA, and it was "dinner". I call it dinner all the time now. Supper actually sounds casual to me, whereas dinner sounds more formal. I guess if that is true, then we usually eat supper here! :rotfl:

And to answer the question....I was thinking broccoli. I make a chicken and elbow macaroni casserole that has broccoli in it...it has a creamy white cheese sauce as the base.

A nice tossed salad would be good too!:thumbsup2

I make a chicken and elbow noodle casserole with a cream cheese sauced base. Now my DH does not like it, so I make it when he is travelling with work, because my kids love it!

This is our traditional dinner with it:

Casserole
corn
brocoli
salad
homemade rolls

I know the corn and rolls adds a lot of startch to the meal, but while DH is away, I make the one big meal and we eat off the leftovers for a few nights.
It's one of my favorite comfort foods dinners!

I vote for steamed broccoli or some roasted asparagus. Roasted asparagus is my easy, go-to veggie; drizzle a little olive oil on top and sprinkle with sea salt. Roast at 425.

I use dinner/supper interchangeably.

In my house we have

Breakfast, lunch and Dinner

At Grandmas we have

Breakfast, Dinner and then Supper.

So we always have to clarify what dinner time is.

Yep, I was going to say that here it's lunch and then dinner.
But for members of my family who are from the more "rural" areas, ;) "dinner" is the middle meal and then "supper" is the evening meal.
Actually, growing up, we called them lunch and supper. But now for me it's lunch and dinner.

As for the OP, I agree with the rest.
Try a green veggie like broccoli, asparagus, green beans or peas. I'm not sure why, but green veggies just seem to go well with casseroles.
Now I want a casserole...yum!

Could you post the recipe to this please? Sounds like something my family would like and am always looking for new things to try.

Up here in Maine where I am we call it supper (if it's eaten at home) but dinner if we are going out? Don't really know why:confused3

I would go with a green veggie, broccoli, asparagus, spinach, or green beans.

Oh, and to add to the topic - I would do steamed brocolli, green beans or asparagus. :)

Here you go!

1 lb. boneless chicken breast, cut into bite sized pieces
1 can chicken broth
1 can cream of chicken soup
1 1/2 cup elbow macaroni, uncooked
8 oz. white cheddar cheese, shredded
1/2 bag frozen broccoli florets
1 soup can of water

Preheat oven to 350*. Place chicken on the bottom of a large casserole dish sprayed with Pam. Layer macaroni, broccoli, broth, soup, water and cheese. Bake for one hour, stirring once or twice during baking, until the macaroni is cooked. Let set 10 to 15 minutes before serving to let sauce thicken.

**I haven't made this in a while, but I remember it taking a little longer for the macaroni to cook. Also, once it sets, it gets nice and thick, almost like macaroni and cheese.

Oh that sounds like something my family would like:lovestruc This is probably a dumb question but do you cook the chicken before pacing it in the casserole dish?

Thanks,
Terri
