Super Walmart shutting down ALL self checkouts...

I think you are making a lot of very unnecessary assumptions. Do what works for you. Maybe let others do what works for them. The stores can do the math and offer what is best for them, profit wise. And they will.
Signed, a tired caregiver that orders her groceries online and does drive thru pick up. 🌻
I'm not really making assumptions. Those people are probably going to be far healthier that I when they reach their mid-70's. Why, because they never used the abilities they were afforded. I used those services a couple years ago after I had a fusion done on my spin. It started out with my ordering online and having my daughter pick it up for me. Then as I improved and did a sickening amount of physical therapy, I was able to drive to the store and use the motorized carts the store had available. As soon as I improved further, I used the walk around the store type of shopping. There are days when my back hurts more than others, but I refuse to stop keeping my joints and muscles active. Am I in good shape? Hell no! But I am still moving as much as possible and am paying for those days when I thought physical activity was not exactly my top priority. When I mentioned that I thought my daughter was lazy, it wasn't just my judging, it was exactly the reason she gave for continuing to use the service.

I am judgmental, just like every other human being is. The difference is I admit it. If we weren't we would be in big trouble, quite often. However, I also know how short life is and am now paying for the years of lazy that I felt was deserved. And maybe it was, I don't know, nor does anyone else. What I do know is that those services are great if needed, not just because we feel we are entitled to use them just because they are there. They are there to help those that needed the assistance for more than a reason to not do something. End of rant!
Overdue for a remodel or replacement then for sure.
My local ginormous Walmart just recently completely remodeled the entire store. All new flooring and displays, rearranging the layout, widening the aisle and everything except having more registers open. (you should see the lines to the self help machines when there are days when absolutely no service registers are open at all). One has to ask why they have 27 registers taking up valuable sales space and then have only two or less open. Makes no sense at all.

ADA requires them to have a staffed checkstand available. Although, you may have to ask.

Reality check... try finding someone to ask. Everybody just passes you along to someone else because they are just doing what they have been told to do.

I think how a customer asks matters. Being polite, respectful and avoiding sarcasm often yields more helpful results.

I am a lot of things, but I am not rude. I am a believer in you get more bee's with honey then with vinegar.

NEVER had that issue. There is always someone up front supervising the self checks, and often that is the person that will check you out. Actually, at our Walmart there are always 3 people up front, sometimes 4 if they have a greeter working. Only time I have had to ask was when I had a bottle of wine. In California, it is illegal to sell alcohol at a self check.

EDIT: If I had felt it was ethical, I would have taken a picture yesterday when I was at Walmart. The produce department is right up front and there were 6 employees stocking there, plus the 3 monitoring the front, so 9 employees right there up front. Plus someone stocking the deli meats, meat department, and about another 5 employees pulling items for online orders. Also, being in California, many items are now locked up with call buttons on the shelf. So an employee HAS to come open the cabinet so you can get your soap, deodorant, over the counter medicines, liquor and baby formula. They are right there when you push the button, they all carry walkie talkies that page them to your aisle when you push the button.
