Ok It's time for ideas and wonderful recipes for the big day. :woohoo: mrsdash
 
We'll probably start the day off with either pancakes or egg casserole. And have a loaf of fresh bread from the bread machine.

For snacky stuff we'll have several choices.
I make a layered dip that starts with refried beans seasoned with taco season, sour cream, guacamole, sliced green onion, tomatos, black olives, and sharp cheddar cheese. I usually make it in 2 glass pie plates so I can omit the olives from one. Serve with chips or baked pita triangles.

I also make a hot dip with cooked hamburger, taco seasoning, milk, velveeta, and sharp cheddar. Refried beans can be added for a thicker dip. Sometimes we add a few drops of hot sauce. This can be made on the stove then transfered to a crockpot to keep the cheeses melted.

A more healthy choice is Rick's Sun-Dried Tomato Hummus
1 can Chickpeas, drained
1/4 Olive Oil
1/4 cup Sesame Oil
2-4 tablespoon Sun-dried Tomatoes packed in Olive Oil
3-6 tablespoon Roasted Garlic (Elephant if you can find it)
2 tablespoon Lemon Juice
Warm Water
Hot Sauce or Cayenne
Salt & Pepper
Directions:
- Mix first 6 ingredients & add to a blender. Puree' until smooth.
- Add warm Water until you get the consistency you want. Season to taste. Chill in frig for at least an hour.
- Options: add pieces of sweet Onion &/or roasted Red Pepper.
- Serve with Pita triangles.
Preparation time: 10-15 minutes.

Wings are always a hit. We deep fry the wings then toss them in a variety of coatings such as hot sauce, actual buffalo wing sauce and the Original Open Pit BBQ sauce. Leftovers can be frozen and then reheated as needed later.

A nice creamy dip if you have access to smoked Salmon is

Smoked Salmon Dip

INGREDIENTS:
3/4 cup sour cream
3/4 cup mayonnaise
3 ounces smoked salmon
2 teaspoons juice from 1 lemon
1 teaspoon prepared horseradish
2 tablespoons minced fresh dill
Salt and ground black pepper

DIRECTIONS:
In bowl of food processor, process
sour cream, mayonnaise, salmon,
lemon juice, and horseradish until
smooth and creamy, scraping down sides
of bowl once or twice. Transfer mixture
to medium mixing bowl; stir in dill.
Season to taste with salt and pepper.
Chill until flavors meld, about 1 hour.

*Dip can be covered and refrigerated
for up to 2 days *Makes about 2 cups

I've also done pulled pork sandwiches too. Just use a pork roast and coat it with a good BBQ rub the night before you cook it. Cook it on a low-med heat in the oven until done. Then simply use 2 forks to pull the meat apart and serve with either store bought BBQ or make your own. This too can be kept warm in a crockpot if you keep it moist by mixing in the BBQ so it doesn't dry out.

I'm obsessed with this spinach and artichoke dip :love:

Spinach-and-Artichoke Dip

2 cups (8 ounces) shredded part-skim mozzarella cheese, divided
1/2 cup fat-free sour cream
1/4 cup (1 ounce) grated fresh Parmesan cheese, divided
1/4 teaspoon black pepper
3 garlic cloves, crushed
1 (14-ounce) can artichoke hearts, drained and chopped
1 (8-ounce) block 1/3-less-fat cream cheese, softened
1 (8-ounce) block fat-free cream cheese, softened
1/2 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
1 (13.5-ounce) package baked tortilla chips (about 16 cups)

Preheat oven to 350°.
Combine 1 1/2 cups mozzarella, sour cream, 2 tablespoons Parmesan, and next 6 ingredients (2 tablespoons Parmesan through spinach) in a large bowl, and stir until well-blended. Spoon mixture into a 1 1/2-quart baking dish. Sprinkle with 1/2 cup mozzarella and 2 tablespoons Parmesan. Bake at 350° for 30 minutes or until bubbly and golden brown. Serve with tortilla chips.


And here's a pizza dip I've tried before that's good too:

Pizza Dip

1 (8ounces) package lite cream cheese
1 teaspoon italian seasoning
2 cups shredded LF mozzarella cheese (italian blend works well here too)
1 cup parmesan cheese
1 cup of your favorite tomato sauce (home made, canned or jarred)

Then add, favorite pizza toppings of your choice:
1/2 small onions, chopped
pepperoni
1/2 red bell peppers or green bell peppers, chopped mushrooms or black olives or turkey pepperoni or cooked sausage

Bread, Triscuits or veggies for serving!

12 servings

Spread cream cheese into bottom of a square baking dish or deep dish pie plate and sprinkle with italian seasoning.
Spread 1/2 of the parmesan and 1/2 of the mozzarella.
Next, spread sauce on top of the cheese and make sure it covers everything evenly.
Add the rest of the cheese and sprinkle on the topping of your choice.
Microwave for 14 minutes and serve with toasted bread, crackers or veggies.

Can also be heated in a 375 degree oven until warmed through and cheese is bubbly.
 
These recipes sound so good!

We've decided that we are going to get food (wings, fries & slaw for me and dh and a small pizza for the kids) delivered because I don't want to be in the kitchen and miss any part of the game!

Dh did go to Pittsburgh yesterday to visit his mom. The kids and I stayed home--It's an almost 8 hour round trip for 1 day. He bought black and gold chips while there. I may make that 7 layered dip, or this:

Hidden Valley Ranch Salsa Dip

1 pkg. Hidden Valley Ranch dip mix (1 oz)
16 oz. sour cream (I use fat free)
1/2 c. salsa
fresh chopped tomatoes and diced green chilis (optional)

Combine dips mix & sour cream. Stir in the salsa and extra tomatoes and chilis. Chill 1 hour and serve with tortilla chips.

Dh brought back a lot of black & gold stuff from a party store in Greensburg. We enjoyed hearing his stories about how everything there was decked out in black & gold. He even saw a car dealership with black and gold cars lined up along the road! :cool1:

Our front porch has a Steelers flag, an old Terrible Towel, and a string of yellow lights. We live in the middle of Ravens territory, and our house is known as "that Steelers house" among our friends. :thumbsup2
 

We're having SIL's family over (her DH and 3 kids. 2 of them are bottomless pits...no lie!)

We're having rigatoni w/ meatballs and sauce, baked chicken fingers, pizza dip, buffalo chicken dip (it was posted on the budget board, I think), and a spinach and artichoke dip.

I don't know what to do for dessert..... :confused3
 
TACO DIP

3 packages of creme cheese
1 10 oz package of taco cheese
1 jar salsa (chunky)
1 can Hormel chili with or without beans

Soften creme cheese and add the salsa to it. Stir until both are combines. Layer bottom layer of casserole dish with half the mixture, add half can of chili on top, half package of cheese, repeat layering. Heat in over on 350 for 20 minutes. Service with tortilla chips.
 
Well, this year I am sulking instead of cooking.

But, last year, the following dip was a huge hit with all of the football-loving folks that hit our house for the annual Super Bowl party (credit to the website chowhound.com for the idea):

Bonnie's Buffalo Chicken Dip

4 - boneless skinless chicken breast halves, about 2 pounds, boiled and shredded with 2 forks (I do mine in the crockpot and then I have homemade chicken broth for other cooking uses; the meat shreds so beautifully, too.)

1 - 12 ounce bottle Frank's Hot Sauce (try NOT to substitute....Crystal is passable but whatever you do, do NOT use Tabasco!)

2 - 8 ounce packages cream cheese, softened

1 - 16 ounce bottle Ranch dressing

1/2 cup chopped celery

8 - ounces shredded sharp cheddar cheese or Monterey Jack cheese or combo thereof

Preheat oven to 375 degrees. In a 13x9x2 inch baking pan, combine the cooked, shredded chicken meat with the entire bottle of Frank's, spreading to form an even layer.

In a saucepan over medium heat, combine cream cheese and entire bottle of Ranch dressing, stirring til hot and smooth. Pour this mixture evenly over chicken mixture.

Sprinkle with chopped celery. Bake uncovered for 20 minutes. Then add the shredded cheese and bake uncovered for another 20 minutes or til bubbly--do not overbake or the cheese topping will get browned and hardened! Remove from oven and let stand 10 minutes. Serve with celery pieces (cut the celery cross-wise, not lengthwise...you want the dip to get scooped into the celery piece)...or with any sturdy dipping chip like Tostito Golds.

And don't forget the Super Bowl cake!!

I make one every year with my girls.............

We bake a rectangle cake. Frost it with green frosting!!

We use Hershey's kisses and Rolo's for the players...............Hugs for the refereees, white chocolate morsels for the yard lines, red licorice for the goal posts (with the help of toothpicks) and then write the team names in the endzone with either M & M's or frosting!!

I usually make a few calzones and we have pizza delivered!!! Lots of dips and munchies along with drinks!!!

Corn Dip

1 can corn drained
1 can mexicorn drained
1 can rotel tomatoes reg or mild drained
1/2 cup to 1 cup mayo
1/2 cup to 1 cup sour cream
4 green onions chopped
1 bag shredded cheddar cheese
Stir together and chill
Serve with corn chip scoops
