Hey guys! We went to Sunshine Seasons today for lunch, and liked it so much that we stopped on the way out for a light dinner. I'm exhausted, so I won't end up posting much about it tonight. That heat really saps my energy 
In a nutshell, we're THRILLED with the new menu and layout. We were never big fans of the old Sunshine Seasons, so this is an incredible improvement for us. It smells great when you first walk into the Land - the party in front of us even mentioned it.
We were overwhelmed when we walked in - everything looks so good. What I'm most impressed with are the grab and go sections. They have tons of stuff for grab and go: sandwiches, wraps, pinwheel sandwiches, hummus, couscous, tabbouleh, bean salad, lentil and chicken salad, potato salad, cheese plates, veggie plates, strawberries and cream, mozzarella sticks, jicama slaw, hard boiled eggs, yogurt, tomato and cucumber salad, chicken salad and croissant, lox with capers, buffalo mozzarella and tomato salad, caesar salad...on and on. There's something for everyone here.
For lunch, we split a fruit and cheese plate (port cheese, gouda, swiss, mozzarella, grapes, strawberries), a roasted beet and goat cheese salad
, and a kid's make-your-own sub. The beet salad was awesome for a counter service salad - two large pieces of peppercorn crusted goat cheese, fresh yellow and red beets, a light vinaigrette, mixed greens. The kid's sub had a TON of meat (ham and salami), cheese, a crusty roll, tomato, lettuce, apple sauce, and a kid's drink. There was enough meat for an adult sized sandwich. The cheese plate was nicely sized, with a good selection of every day cheeses, and very ripe fruit.
At dinner, we stopped in on the way out and had a bowl of sweet potato bisque and a roasted veggie cuban. The sweet potato bisque was veggie based, not cream based, and had a nice warm spicy kick to it. It was large, too! Enough to share. The veggie cuban had swiss cheese, roasted zucchini, red bell peppers, portabella mushrooms, pickles, and a garlic spread. We love garlic, and this also had a great garlic kick to it.
We didn't try dessert since we were headed to France
But they looked awesome.
Drinks are self serve, and there are also candy bars, chips, and fresh fruit at the registers. It's a little confusing where the lines start at each station, and some of the grab and go items didn't have prices (pitas, lox, beer, wine, fruit) which was a little frustraiting. I'd hate to pick up the baggie of pitas and have it end up costing $5, $8.
Anyway, like I said, we love the update they gave it. We're much happier with Sunshine Seasons than we are with the Garden Grill. A lot of the choices are more adventurous than the counter service places in the World Showcase! We'll definitely make this a meal choice every time we go to Epcot, from now on.

). But, the way you've described all the food, it sounds like food I'd eat for sure! I love interesting stuff like that, and I'm all for veggies and garlic (I'm an adventurous eater!). My kids would dig that sub for sure too!
