Sunday September 8th - help with evening park planning

Hi All! I am a fairly experienced trip planner but am stuck on our arrival day - Sunday. We will be getting in to MCO at 9:30am and I am planning on being at BCV by 11:30 or so, followed by a leisurely afternoon of Fantasia mini golf, Ample Hills, and pool time. We usually like to amble over to Epcot F&W our first night but since this is Sunday - I'm thinking to steer clear since the weekends are usually pretty crowded. My next plan was a walk to HS with a reservation at HBD, attractions and fireworks. I am rethinking that plan with GEdge open, new Tier 1 FP rules, and yes - SUNDAY. Would you still do HS or avoid on a Sunday evening? Would you avoid Epcot F&W on Sunday evening? Would we do better at MK? What to do, what to do

FYI we do have park hoppers
