Summer Crockpot Recipes

I tried the ribs once, and they came out nasty greasy. Do you do somethng to allow the grease to drain?

I will usually put the ribs in the oven to brown for 15 minutes at 400 degrees before I put them in the crockpot. Yes, it's an extra step but most of the grease ends up in the baking pan so I don't have to worry about greasy ribs in the crockpot.

Sausage and Peppers is really good in the crockpot as well.

Cut up a ton of peppers and onions and put in the crockpot. Throw some italian sausage in with it along with italian seasoning and a small jar of pasta sauce.

Serve on rolls or over pasta.

I'm doing brisket in the crockpot today. Slice a large onion and put in the bottom. Season flat cut brisket heavily with a lot of salt and pepper. Put on top of onions and pour small jar of your favorite bbq sauce over it. About an hour before serving, take it out, slice against the grain and put it back in the pot. It will absorb all the juices and be fork tender. Can't wait for dinner!

I haven't read all of the posts yet but I too found this. I now broil my ribs the night before. I do it after dinner... I have even done it after the kids are in bed but I have to be extra careful not to set off the smoke alarm by their rooms! Anyway, I broil them for about 3-5 min, turn over and broil another 3-5 min. I am not trying to cook them, just get the fat off. Wow, does it help. One time I did it the "old" way and DH noticed immediately.
 
You can also boil the ribs for about 20 minutes beforehand. That eliminates a lot of the grease and helps make them very tender. Works great if it is too hot to turn on the oven to broil them.
 

going to oc md need to feed big family, 3 meals/day
looking for something to throw in brfore beach all day...seems like no matter how big brkfst they come back from the beach starving...thanks only use crock pot in winter...
 
i agree w/rib thing too greasy for dh..asked an expert once she said to stand the ribs up against the side or roll big balls of tin foil and place the ribs on top. she said the sell an insert for that stuff..also my sis throws a pork shoulder can of beer and bag of saurkraut and done...also i heard that boneless chik gets too dry in pot? no?
 
This is a great one for a crowd as well. At first I thought it sounded bland, but after making it, it was such a big hit.

Frozen whole turkey breast (like Jenni O), defrosted
put in crock pot on high for about 6 hours.
Then cut big chunks of meat off bone. Put back in crock with 1 can of cream of chicken soup. Cook another 2 hours or so on high. Will then shred easily with a fork.

Can serve alone or on sandwiches.
 
I have three, and they may been slight repeats of some on here, but I'm posting anyway!

1) Chicken fajitas - I put a pack of boneless chicken breasts in the crockpot with a container of chicken stock and 2 packets of taco seasoning powder.
Serve with soft tortillas, cheese, whatever.

2) Pork BBQ - Put a boneless pork roast in crockpot with two bottles (or one large) of Sweet Baby Ray's BBQ sauce. It just falls apart at the end of the day. We use ours for sandwiches.

3) Italian Sausage - Put Italian Sausage links in crockpot with a large jar of Ragu (or whatever sauce). Cook all day. Come home and think that someone's Italian grandma has come for a visit. Cook a pot of spaghetti noodles...enjoy.
 
something that my family loves and is really easy


Cheap and I mean Cheap steaks
Put in crockpot
Add some water
beef boilion cubes

cook all day....break up the steak ( it will be falling apart )then I add 2 packages of dry beef gravy and a little flour

cook noodles

the meat falls apart....pour meat and gravy over the noodles.

another great recipe .. is Russian chicken ... your can serve with potato salad and pasta salad..


the way I make it is throw
boneless chicken breasts..... envelope of onion soup mix... and small bottle of catalina or French salad dressing.... into crock pot ...cook till chicken is cooked and tender...

I made Russian chicken last night in the oven ~ I served it with rice - my recipe *and most it seems* called for Apricot preserves, Russian dressing, and an onion soup mix envelope + chicken ~ I baked it in a 9x13 @ 350 for an hour, I placed the chicken in the baking dish, and poured the other 3 ingredients *combined* over the chicken. Everyone *my mom, my grandma, my 2 BIG younger brothers, my sister, her 2 boys and my kids* loved it and we had leftovers ~ it was probably 4 lbs of chicken.

I'm sure it would cook just fine in a crock pot. I'll try that when it gets hot here in a couple weeks.

we have made it both ways..with and without the apricot preserves..... we all seem to like it better without...
and the chicken comes out soooooo moist in the crockpot i prefer making it in there instead of the oven.......

I just made this

Working Man's Roast
1 rump roast
1 can cream of mushroom soup
1 envelope dry onion soup mix
2 t worchester sauce
1/8 t salt and pepper each
1/4 t garlic powder and seasoned salt each

put rump roast in crock pot. Mix all other ingredients and pur over roast.
cook on low for 8-10 hours or until tender.
Slice for sandwiches.
after I take out the roast I add a little cornstarch to make a gravy.

Leftovers our great too.
 
I do the BBQ pork thing too.

I also make chicken taco meat in the crockpot. Just put some boneless skinless chicken breasts, chicken broth and taco seasonings. Cook on low for about 6 to 8 hours. Then just shred it up when it's finished. You can put in frozen chicken too, which is good for me because I always forget to take things out of the freezer to thaw.

I made a meat loaf in my crock pot for the first time the other night. I packed it down so it was round instead of square but it cooked quickly and nice an evenly.
 
Pork tenderloins were B1G1 and I had a coupon - I cooked one in the crockpot with Penzey's BBQ spice on top and enough Coke just to cover it. I did 1.5 hrs on high and about 3 hours on low. I drained out the Coke and juices, it shredded really nicely, and then added my favorite BBQ sauce to taste. I know most people think tenderloin is too lean to make pulled pork or that it's a waste to use something already so tender in the crockpot, but I got two of them (4 lbs total) for $9.50 so it was a pretty good price and I like that it's lean and not enormous. We served it on hamburger rolls with corn on the cob and baked beans - yum!

I also do beef roasts in there. I cook it on top of potatoes with beer, beef broth, salt, pepper, gravy mix, garlic, onion, etc. We eat pot roast the first night and then the next night I shred up the remaining beef and make tacos or BBQ beef sandwiches, whatever sounds good. If we're tired of it or it's too hot I just shred up the beef and freeze it for later. Same thing with chicken breasts - shredded BBQ chicken sandwiches or tacos.
 
I hate making Brisket in the oven because it takes forever but this is a really good recipe for making it in a crockpot. Its not a BBQ brisket, but its super tender and great on sandwiches or as a meat dish with some veggie sides. It's from a Taste of Home Cookbook. I usually buy a brisket that is around 5 lbs and freeze half.

1 fresh beef brisket (2 1/2 lbs), cut in half
1 tbsp vegetable oil
1/2 cup chopped celery
1/2 cup chopped onion
3/4 cup beef broth
1/2 cup tomato sauce
1/4 cup water
1/4 cup sugar
2 tbsp onion soup mix
1 tbsp apple cider vinegar
hamburger buns (if you want to make sandwiches)

Brown the brisket on both sides in oil. Put the meat in the crockpot. Cook the onion and celery in the oil. Add the broth, tomato sauce and water - loosen any browned bits from the pan. Add sugar, soup mix and vinegar. Bring to a boil. Pour over brisket.

Cover and cook on low for 7-8 hours or until meat is tender. (Mine is usually done in about 6 hours.) You can skim the fat from the cooking juices and use it as an au jus. We just shred ours, but if you want to slice it neatly, take the meat out and cool it in the fridge, slice, and then put back in the juice to reheat.
