Suggestions for the last day

Greetings, everyone! Very excited to be taking a week long Disney trip this summer (6/30-7/7) Being a FL resident, this is the first time I've gone this long since I was a teenager.

So we have a really fun itinerary planned, however, kinda stuck about what to do on the last day. We live 3 hr away, we usually check out of the hotel and spend the rest of the day/evening in a park. But after a week, we're thinking we might be tired and might wanna do something different for a change. Any suggestions? Maybe a unique dining experience or a hidden gem. I'm traveling with my little brother, who will be almost 17 at the time.

Here's the layout for the begining the trip:

6/30- Arrive around 4. EPCOT and Akershus dinner
7/1- Typhoon lagoon, Chef Mickeys for dinner and fireworks at MK
7/2- Animal Kingdom in morning. Day break, Ohana dinner, and EMH @ AK
7/3- Epcot in day, England lunch. Break, then dessert party at HS (very excited for that!!)
7/4- Boardwalk breakfast, Tea at GF, Tony's for dinner in MK and Fireworks
7/5- HS in Day, BOG dinner, and AK EMH at night
7/6- MK in day, swim break, 1900 park fare at night
7/7- TBD

any suggestions are greatly appreciated. Thanks, everyone :)
 
How about riding the monorail around the resort loop and stopping at Grand Floridian, Poly and Contemporary for a snack at each or ...whatever. Or...Disney Springs. So many good restaurants there now.
 
How about walking around Disney Springs? We usually take a late afternoon flight home our departure day and always hit Disney springs for some lunch and shopping :)
 
We're doing a character breakfast at GF before heading to the airport. Then if there's time, visiting the shops at the monorail resorts.

I was thinking maybe Ohana or Tusker House. Time to see what's available!
 
Have you been able to see the night time activities at DAK? I saw you had EMH, but no time for the actual show. Given the addition of Pandora, night time safari, etc. - may be something to consider.

If that's the case, you could probably swap out your 1900 Park Fare for breakfast that morning (going to AK the night before).

Just an additional option to consider!
 
My suggestions involve parks , but could be very fun, - either a tour or the 4 parks in 1 day challenge!
