Here are some South Beach diet recipes. So keep in mind that they are not totally sugar-free but they are certainly heading in the right direction. Enjoy!
Chocolate chip oatmeal cookies
1/2 c softened trans fat free margerine
3 TBSP Brown Sugar Substitute(Sugar Twin )
1/4 c egg beaters
1 TBSP milk (or more, if needed)
1/2 c whole wheat flour
1/2 c quick cooking oats
1/2 tsp cinnamon
1/4 tsp baking soda
1/4 c chocolate chips (preferrably bittersweet)
In a medium bowl:
Combine margerine and br sugar substitute.
Add egg and milk, blend well.
In small bowl, combine flour, oats, cinnamon,
and baking soda.
Stir into margerine mixture.
Add chocolate chips, mix well to distribute.
Heat oven to 350
Drop rounded teaspoons of dough about 1"
apart onto greased cookie sheets.
Bake 15 minutes. Makes about 36 cookies.
Brownies
Approx. 5 grams of carbohydrates per serving
Serves: 18
Ingredients:
1/2 c. butter, room temp. (or lowfat butter, or applesauce)
1/2 c. egg beaters
4 1-oz sq. unsweetened chocolate
2 tsp chocolate extract (or 1 TBS unsweetened cocoa powder)
2 Tbsp water
2 Tbsp soy flour or whole wheat flour or almond flour
1/2 c. coarsely chopped walnuts
8 packets sugar substitute (or to taste)
1 Tbsp vanilla
Cream the butter w. electric hand mixer. Add eggs one at a time, beating well.
Melt chocolate & water in top of double boiler.
Add melted chocolate, soy flour, chopped walnuts, & sugar substitute to butter. Mix well.Taste for sweetness. Add more sugar if needed.
Grease 8x8 quart flat baking pan.Pour batter into pan; bake 15 minutes.
*As a general rule, I substitute the flour with whole wheat flour and almond flour and use sugar substitute with many of desserts to convert them to phase 2 acceptable.
Brownies
1 pkg. Krusteaz Fat Free Brownie Mix
3 C Fiber One or All Bran cereal
2 1/2 C Water
Pour water over Fiber One and let sit for 5 minutes. Add mix and stir. Batter will be thick. [Add nuts if you wish]. Bake 20 minutes at 350 degrees. Makes 24 brownies. I have made these & found them to be much better after the 2nd day [let them sit for a full day]. Just don't eat too many...
You can also use muffin mix.
