After many, many calls and emails, I found out today that sugar-free/no-sugar-added specialty cakes (such as for anniversaries, birthdays, etc.) are available to be ordered at WDW. You can order SF/NSA cakes from the following resorts:

Boardwalk Inn
Caribbean Beach*
Old Key West*
Port Orleans French Quarter*
Port Orleans Riverside*
Saratoga Springs*

They may be available through other resorts as well, however my knowledge is limited to Boardwalk Inn and those resorts whose specialty cake needs are serviced by Boardwalk Bakery (indicated by a * above).

To order a SF/NSA cake, you need to contact the resort restaurant directly a minimum of 7-14 days ahead of your arrival date. There is a list of phone numbers to do so HERE.

This is what is currently available (as of 04-01-12):

Cake Flavors: Vanilla or Chocolate
Icing: Buttercream
Filling: No filling available
Size: 10"
Price: $54

Price includes inscription (such as "Happy Anniversary", "Happy Birthday", etc.). They can't decorate them with chocolate figurines or shavings as these are sugar-based; however, they do have some plastic decor for an additional $10 charge.

You can either pick the cake up at the resort restaurant or have it delivered to your room. In order to have it delivered to your room, you must be present at time of delivery AND be staying at the resort from which you ordered the cake.

Additionally, per my email response from special diets, they do offer celebration cakes for guests with special dietary needs at some TS restaurants. For pricing and options, contact the Cake Hotline at 407-827-2253 at least 7 days in advance.

No nutritional information is available, but at least Disney offers this option for those who could not otherwise order a "regular" specialty cake for their celebration.

Hope this helps someone! :goodvibes

I agree. No matter what I did, I couldn't pin them down to whether the cakes were sugar-free OR no-sugar-added - only that they were one or the other.

But I figure it this way ... DH and I wanted to celebrate with a cake. We wouldn't have been able to unless something like this was available. I know my diabetes well enough to be careful and to only have a small portion, whether it is SF/NSA or not. ;)

it's unfortunate for those of us with kids (or adults) with type1. If we went asking for a cake and told them we had diabetes they'd give us this. And what good would it do? There are still so many carbs in the sugar alcohols that we have to account for (with insulin) that it's just 100x easier to have a regular cake - because that generally is standard and it's something I can eyeball carb wise. Sugar free..who knows what's lurking. (plus...bathroom trips after? thanks but no thanks....)

It's just sad that Disney is not making any of this info available to us. Frustrating.

Because we deal with a lot of allergies, we get birthday cakes from Babycakes. DH who has T2 diabetes also partakes of course. Well, we discovered that even with him eating seconds and even thirds (yeah, he's a big kid sometimes but his A1C is 5.9 so occasional cheating isn't unreasonable for him as long as he doesn't overdo it) that his blood sugar after 2 hours and the next morning was still decent. They use agave nectar instead of cane sugar and they use denser, higher protein flours in their cakes so his body processes the ingredients much better than sugar free cakes that are made with regular flour and artificial sweeteners. I'm not saying this will work for everybody but it's at least worth considering. Obviously you need to know how your body processes different ingredients. My DH seems to have more trouble processing wheat flour than gluten free flours plus agave nectar in general is much easier to process than cane sugar.

right but for a person with no insulin production of their own and taking insulin that same cake will probably cause huge blood sugar spikes. It's nut just the sugar. The flour (all flour) will spike etc. Diabetes is just not a one size fits all disease and disney really has ignored the needs of those with type 1. If I don't know the total amount of carbs in a food I can't give the proper insulin. Sugar free..still oodles of carbs. So for us it's a huge issue. I really can't understand why they have such a problem with providing us with the info that we need.

I'm looking on babycakes website and something like their cupcake has as many carbs as a regular cupcake. "agave sweetened"..but still loaded with carbs.

Dining at California Grill. Quoted $29 for a 6" sugar-free cake with whipped cream icing. I thought that was pretty reasonable.
