Sugar Free Dessert Recipes Needed

The inlaws are driving down for a visit next week. DMIL has recently been diagnosed as borderline diabetic, doesn't need insuline yet, but is on a strict diet. So, what can I make that is still yummy and satisifying for dessert? Does anyone have any great tried and true recipes to share?

Sugar free bread pudding with Whiskey sauce
INGREDIENTS:
1 (20 ounce) loaf French bread
1 quart milk
3 egg
2 cups granular sucrolose sweetener (eg. Splenda™)
2 tablespoons vanilla
3 tablespoons margarine, melted
1 cup raisins

1 cup granular sucrolose sweetener (eg. Splenda™)
1 egg
1/2 cup margarine, melted
1/4 cup whiskey, or to taste

DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
Break bread into pieces, and place into a large bowl. Pour milk over bread, and crush with your hands until well blended. Stir in 3 eggs, 2 cups sweetener, vanilla, 3 tablespoons margarine, and raisins until evenly mixed. Transfer to the prepared pan.
Bake for 45 to 60 minutes in the preheated oven, or until very firm.
To make the sauce: In a medium bowl, cream together 1 cup sweetener and 1 egg until smooth. Gradually mix in the melted margarine, and continue stirring to dissolve sweetener. If the sauce is difficult to blend, it may be heated gently, but be careful not to curdle the egg. Gradually stir in whiskey which should make the sauce creamy smooth.
To serve: Allow pudding to cool completely, then cut into cubes, and place into individual heat-proof serving dishes. Pour sauce over, and heat under the broiler until golden, about 3 minutes.



Sugar free Rugelah -so yummy!! :Pinkbounc

INGREDIENTS:
1 cup margarine
8 ounces cream cheese, softened
2 3/4 cups all-purpose flour
2 teaspoons vanilla extract
1 cup chopped raisins
1 cup chopped walnuts
2 tablespoons ground cinnamon
1 cup apricot spreadable fruit

DIRECTIONS:
Cream together the margarine and cream cheese in the bowl of an electric mixer. Blend in the vanilla. Mix in the flour. Chill the dough.
To make the Filling: Mix together the chopped raisins, chopped walnuts, and cinnamon. If you have a food processor, place the whole walnuts and raisins into the bowl, sprinkle with the cinnamon, and chop them together by processing in short pulses.
Divide the dough into 4 equal portions. Roll out each portion into a 10 - 12 inch circle 1/8 inch thick on a lightly floured board or between two sheets of waxed paper.
Spread a light layer of preserves (approximately 2 tablespoons) onto each dough circle. Sprinkle each circle with approximately 1/4 cup of the chopped nut-raisin-cinnamon mixture.
Cut each circle into 16 wedges using a pastry cutter or a pizza cutter. Roll each wedge from base to point. Place point down on a lightly greased or parchment lined baking sheets.
Bake for 15-17 minutes at 375 degrees F (or until golden). Remove to racks to cool.
 
I make a SF Truffle.
Need SF pudding instant(I like to use chocolate and either butterschotch or white chocolate) I like to use two different kinds but can use the same
SF chocolate cut into small pieces.
SF or low sugar pound cake.
Cool whip

Use either a truffle bowl or a large glass bowl
put a layer of cool whip, pound cake, pudding, candy.
Keep layering until you end at the top.
top put cool whip, i either shave some chocolate on top or put a small piece in the center.
chill in fridge
 
sugar free is not always the best choice....sometimes the carbs make the sugar free not a good choice.....see what the carbs are and then decide.
I looked at sugar free candy and the carbs were more then one meal of carbs for me...YIKEs.....
 

Eli's does a really good no sugar added cheesecake. Also, check the bakery department of your grocery store--our local Jewel (Albertson's corp) has a pretty good selection of sugar free desserts. The angel food cake bar is really nice with mashed strawberries.

Most of the no sugar added ice creams are pretty good--we've had the best sucess with breyers. Edy's Whole Fruit Sorbet now comes in sugar free strawberry, lemon, and raspberry.

As for recipes, pumpkin pie works really well with Splenda instead of sugar. You can also omit the crust and call it pumpkin custard--just as tasty but fewer carbs.

Be careful to read the packages of things you buy in the store. Some are sweetened with a chemical called Malitol. A little bit is OK, but if you eat too much Malitol it can give you a really upset stomach. No fun at all!
