I know that the plan generally lets you trade down (CS using a TS credit). But after chowing down for days on the DDP, if I get to dinner one night and am not too hungry, can I order 2 appetizers and a dessert? 3 appetizers (and split the dessert with someone else?

Probably not - but you can ask. The Disney Dining Plan includes one entree, one non-alcholic beverage, and one dessert, per person per table service meal. If you're not very hungry, just don't pay for your meal with a dining plan credit.

eta: responding to the other part of the OP's post, the Dining Plan generally does NOT let you trade down; exceptions are made during the Free Dining promotion, but that's it. It's not a year-round policy.

They're pretty unambiguous about the policy for '08 being that if you are on the basic dining plan, appetizers are NOT included.

Just from your post, I think you may be talking about the deluxe plan (either that or you are on the regular plan on a visit that begins in '07), which does include appetizers. I doubt they would switch appetizers for desserts (unless you run across a place like CA. Grill that has a cheese plate on their dessert menu) but you can ask if you want to switch an entree for an appetizer, can't believe they wouldn't allow that.

We have been able to substitute an appetizer for an entree but I think it would be at the discretion of the server/manager.

And cheese plates can usually be either an appetizer or dessert.:thumbsup2

Edited to add I think the poster is talking about an upcoming Nov
Dec. 07 trip. If not, than yep no appetizer unless on the Deluxe.

So, even if the OP were able to do this - based on BCV's experience, it's likely that if it were allowed, the trade would be one-for-one. One appetizer in place of one entree. The OP would also (for the rest of 2007) be entitled to an appetizer - so while she/he may be able to end up with two appetizers instead of an app and an entree, there likely would not be any 'bonus trade' allowed.
