Stuffing/Dressing

Don't really have a recipe because I don't measure anything, but I use the same method and ingredients my Mom and Aunts always did. Tear up your bread, add Bell's poultry seasoning until it "smells right", add melted butter, onions and celery (sauteed in the butter), a beaten egg (or 2 depending on how much you are making), hot water to moisten it up and salt. Stuff the bird and put the rest in a buttered casserole dish.
 
Whether you call it stuffing or dressing seems to depend on: 1) placed in the bird is stuffing/cooked separately is dressing or 2) regional thing for various parts of the country.
 
We had cornbread stuffing yesterday (meal was catered by Cracker Barrel). The stuffing tasted good but was WAY too mushy. They give you the stuffing and then instructions for adding broth and cooking and IMO they called for far too much broth. It had nearly the same consistency as the mashed potatoes.

I'm a big fan of stuffing...but woe unto the person who dares to put fruit or oysters in it. Blech.
 
We’re in the South, & it’s dressing baked in a casserole dish completely separate from the turkey.

True southern cornbread dressing is also a different consistency than stuffing.

I use my mom’s recipe. However, I sauté the celery & onions first.

As DH & I were making the dressing yesterday, I reflected that, out of all the holidays, Thanksgiving is the one filled w/ the most family food traditions.

And the southern cornbread dressing is a basic, simple recipe, but people probably have a million little different adjustments to how they make it, based on how their family always made it & their own individual changes to the recipe over the years.

Stuffing. I grew up only eating stove top. As I got older I tried homemade and hate it. Stove top is the only stuffing I like.

My brother-in-law (my sister’s husband) is from Michigan & that’s the only kind of stuffing he likes. When we host Thanksgiving, in addition to our southern cornbread dressing, I always make Stove Top Stuffing just for him.

We got our Thanksgiving meal from Cracker Barrel too this year. We opted for the Hot & Ready meal vs the heat it up yourself meal. Our stuffing was a little on the dry side. It could have used more broth and some extra spices so it wasn’t so crumbly. I’m not a big fan of cornbread stuffing, so I knew it wouldn’t be my favorite. Everything else was good. The turkey was downright delicious! The kids thought the gravy was strange because it had small pieces of veggies in it, but it tasted good. Mashed potatoes were yummy! We also order a chocolate pecan pie on the side, which was awesome.
