I am driving myself nuts trying to figure out how to do our strollers at Disney. We will have at least 2 adults at all times able to push. We have a 6 year old who is not a big walker (is always begging to sit in the stroller), a 3 year old, and a 2 year old. The 3 year old would never, ever, ever sleep in the stroller (yes, I know people are surprised when their kids sleep in strollers at Disney when they never would normally...trust me, he never would based on his background). The 2 year old doesn't normally, but she is one I could see doing it at Disney when she got tired. She will also sleep in the Ergo if exhausted, but I am debating even bringing it as we don't use it often anymore and I think it would be too hot.
We have a regular travel system stroller (folds all the way down), basic umbrella stroller, double stroller (one seat lays down), a sit n' stand (neither seat folds all the way down, but one slightly reclines). We also have access to my mom's basic travel system stroller, which also folds down. We are on site, so we will be using the bus system and will have to be folding and unfolding strollers each time.
We could also rent, but that seems silly when we have so many perfectly good strollers at home.
I want all the children to be able to sit and/or ride at once in case they are all tired, but I also don't want to be struggling with 2 bulky strollers on the bus while wrestling three young kids.
Right now I am leaning towards the sit n stand with the umbrella stroller, but that wouldn't give the youngest a place to lay down and the umbrella stroller is a little short so pretty awkward to push. I haven't found one yet that isn't awkward to push, and I'm not even super tall. Any thoughts?

one thing to remember with 2 strollers who is going to be able to help kids on bus? I would use double plus the Ergo esp for 2 year old getting on bus. if too hot look at a park rental for 6 year old even though he would have to walk to bus.

If you aren't staying in a room that's within walking distance from the parks and/or has the space for two big strollers I'd say bring the double and stash the ergo in the basket underneath.

We've been with 3 kids at similar ages as yours. We took a double umbrella stroller. Our oldest walked most of the time and if she got tired, our middle child got up and walked while the oldest rode for a bit. The biggest problem was at night, there were a few times where the oldest would be tired and I would wind up holding her at the fireworks and carrying her out while my wife pushed the double stroller. When boarding the bus at night, my wife had the kids and I folded up the stroller.

I know every kid is different, but this seemed to work out best for us.

If you want three children to ride your choices are either to struggle with three kids and two strollers or to buy a triple stroller.

If the issue is that your oldest for some reason *can't* go without a stroller, you suck it up and deal with two strollers. (I understand, I have a six year old with special needs. You do what you have to.) I'd probably stick with one of your doubles and a rental single.

If the issue is just that he doesn't want to, I think you'll make life easier by sticking to one double stroller. Go a little slower, take a few more breaks, have the adult not pushing the stroller focus on him. Maybe swap out one of the little kids to walk or be carried for a while to give him a break. Maybe rent one at the park for a day so that you don't have to deal with it on the bus.

You know your kids best, and you will need to figure out what will work best for your family. I have 7 kids, so we've been to WDW with 3 that could be in a stroller multiple times. We've always brought our double stroller and let the older two "stroller kids" take turns resting in the stroller. There's no way I would try and fight with two strollers on the buses, boats and monorail. And we've always had older kids that could have helped, which it doesn't sound like you have any additional help. Struggling with one stroller is bad enough. You will need someone to help the kids on the bus/boat/monorail and someone to deal with the stroller. I would try it with one stroller and worse case, you can rent a stroller from the park if you absolutely need another one. Or, if you don't mind buying another stroller, I've seen double sit and stand strollers that will fit 3 kids (2 in the stroller and one on the back "bench").

I would probably bring the double umbrella. I wouldn't bring a carrier, I know for myself, I would never use it because it is just too hot. I would probably try to get the 6 year old to walk as much as possible (I promised an extra souvenir when our oldest was 6) if they walk without complaining, but still try to let them ride when one of the little ones wants to walk (or dad can carry them/piggy back) even for a short time, it will give the 6 year old a rest. I wouldn't want 2 strollers, there are there are times where you separate (one get in line for food, and the other park the stroller and take the kids, one goes to the bathroom with one kid, one goes on a ride with a kid) I find the double umbrella to be the most versatile.

Good luck!
