I have a new favorite:

Cheesecake Stuffed Strawberries

Take a quart of berries.... cut the bottom tip off of them (so they will stand on a plate) and then gently "core" them. Set them aside.

In a small mixing bowl, place 16 oz of softened cream cheese, 1C powdered sugar and 1t vanilla.... whip this until creamy (if not stiff enough more sugar may be added until at desired consistency) place your cheese mixture in a pastry bag or any plastic storage bag (cut the tip off so you are able to squeeze cheese through) Then fill your berries! These are a big hit at a brunch! If you like cheesecake, you will love them!

Just made this and added a squeeze of lemon juice to the cheese mixture..... even better!!

A drizzle of chocolate Bananiem? Be still my heart! Wish I had some to add! Next time.... for sure next time!!
 
Add a drizzle of chocolate and it sounds like the perfect food to me!!:D
 
I'm doing from memory so it may not be exact. but here goes:
Slice strawberries and mix with a couple TBS chopped fresh basil, 1/4 c. rasberry vinegar and 1tsp sugar. let sit for awhile.

Put salad greens in a bowl and sprinkle with gorgonzola chees (or feta cheese) . strain the strawberries and put on the greens. Mix 1TBS olive oil with the vinegar mixture thoroughy and pour over. Toss.

This is a great salad. We eat it non stop through June and early July. BY the way, it is a low fat recipe, that 's why only 1 TBS oil. YOu can add more oil if you want.
 
Here's one of my favorites:

Fresh Strawberry Almond Pie

Short Bread Cookies and Almonds Create a Delightfully Refreshing Dessert • Serves 8

Crust:
1-1/2 Cups Crushed Shortbread Cookies
1/4 Cup Finely Chopped Slivered Almonds
1/3 Cup Butter or Margarine, Melted
Filling:
6 Cups fresh cut Strawberries, sliced in half
1 Cup Sugar
3 Tablespoons Cornstarch
1/3 Cup Water
1/4 Teaspoon Salt
1/2 Tsp. Almond Extract
Sweetened Whipped Cream

Heat oven to 350 degrees. In a small bowl, stir together all Crust ingredients. Press on bottom and up sides of 9" pie pan. Bake for 8 minutes. Cool completely.


Mash enough Strawberries to equal 1 cup. In a 2 quart saucepan, combine Sugar and Cornstarch. Stir in mashed Strawberry Mixture and water. Cook over medium heat, stirring constantly, until Mixture thickens and comes to a full boil (8-10 minutes). Boil 1 minute; remove from heat. Stir in Salt and Almond Extract. Cool 10 minutes.

Fill baked Crust with remaining Strawberries. Pour cooked Strawberry Mixture over Strawberries. Refrigerate at least 3 hours. Garnish with Sweetened Whipped Cream and serve.

I just tried Mermaid02's strawberries and added a drizzle of chocolate-- They're so good!!!
Here's a pie my family likes and also how I got the idea of the chocolate.:)
Strawberries and Cream Pie
1 graham cracker crust
8 oz. cream cheese, softened
1/3 c. sugar
1/4 to 1/2 tsp. almond extract
1 c. whipping cream, whipped
1/2 c. semi-sweet chocolate chips
1 tablespoon solid Crisco shortening (oil won't harden)
4 cups fresh strawberries, washed and hulled
In large bowl, beat cream cheese until fluffy. Gradually add sugar and almond extract, blend well. Fold in whipped cream. Spoon into pie crust. Arrange strawberries pointed side up on top of filling. Chill. In small saucepan over low heat, melt chocolate chips and shortening, stirring constantly until smooth. Drizzle chocolate over strawberries and filling. Chill until set. Store in refrigerator.

Optional: Dip pointed end of each strawberry in melted chocolate to cover half of strawberry. Set stem side down on waxed paper and chill until set. Arrange on top of chilled filling.
 
Bananiem...... for even MORE chocolate you could dip the strawberries before you put the cheesecake mixture in them!

All these recipes sound great! I love in season strawberries!
 
We loved them just dipped in milk choc..then drizzled with white choc. they look fantastic..taste great...and.....are very festive for any party
 
I'm making the Cheescake Stuffed Strawberries tonight. We are eating with the in-laws and some out of town relatives. MIL has made everything, so there wasn't much left on the menu for us to bring. I wanted something pretty to put on my new red/wht/blue platter.

Strawberry Salad

spring greens (washed)
sliced strawberries
walnuts chopped
crumbled blue or gorgonzola
raspberry vinegarette or champange dressing

I go by eye. My family likes lots of cheese and strawberries.

Mmmmm! I can't wait to try the salad (with Feta, my favorite) and the stuffed strawberries with a little lemon juice and chocolate. All I can say is, "DROOL"!!
