Stays not merged - How does Dining Reservations work?

I have stays that have not been merged yet. Going on day 15 and supposedly some issue that is on the stays is what I found out yesterday.

Can I make reservations for the length of my time at WDW or only the length of each leg of the stay?

Length of stay starting at 60 days from check-in for each separate reservation.
