Staying in a Villa, Quick Meal Ideas Please!!

We are staying offsite in a 2 bedroom villa this time. DS is 17 so we thought it would be good for us to have seperate bedrooms for a week ::yes::

We have made a bunch of PS or whatever they are called now, but need some ideas for some quick, easy, VERY LITTLE CLEAN UP, type meals for those breakfast/lunches/dinners we decide to stay in for. We are driving so we can bring some food with us...

It's vacation and we will be eating out plenty but I figure with the full kitchen we may want to relax on the lanai and have a bite, so give me your food ideas! Thanks! :flower:
 
Stop at the grocery after check in.

Quick dinners:
- mac & cheese (some of the natural ones aren't too bad, like the ones by Annie's) with salad (buy a bag) and fruit.
- frozen pizza with salad
- BBQ chicken breasts (buy frozen boneless breasts and bottled BBQ sauce)
 
Add heavy-duty aluminum foil to your list and cook stuff in foil packets--NO clean up! For example, a chicken breast, some veggies, and either Italian salad dressing or BBQ sauce in the packet, fold up all the edges to seal and bake on a cookie sheet. You can do the same thing with fish and veggies (I'd just use olive oil and salt and pepper with the fish).
 
The last time we did the big family reunion thing, we tried a lot of cooking in the villa. The fact that the pans weren't non-stick was a PITA. Everything that wasn't boiled was very hard to clean up after. (Baked in foil is a great idea... thanks Amyjo.)
 

We like pan-fried fish. Add a non-stick spray to yr list. A little S&P, squeeze of fresh lemon, a hot skillet. Bag of coleslaw mix, some yellow rice(make it in microwave), veg if you'd like-
spaghetti or pasta is so quick & easy-- saute some easy peel shrimp or cleaned crab or in garlic oil &/or butter, 'shrooms or any veg toss with pasta--or just plain ol' Ragu or could add green olives, or deli-roasted chicken or sauted Italian sausages, perhaps some chopped bell pepper again 'shrooms--pre-made Italian bread
Shake 'n' bake!
Roaster chicken--Pour over bottled Italian dressing, or French dressing--Roast @ 450 degrees (yes, that's 450) done in 1 hr serve w/instant garlic mashed or StoveTop, perhaps some summer squash? Dip fresh berries in chocolate bars melted in the microwave--
toasted cheese sandwiches & soup--Tuna melts

We always hit Sams Club and stock up on heat and eat type foods ... pizza rolls, party foods like the little sliced rollup appetizers and miniature quiches, popcorn chicken (great on salads).

We also like to bake chicken and potatos as suggested above. Sometimes we spend one afternoon cooking up things that can be reheated like chili, taco meat, or a frozen lasagna.

We picked up some pre-cooked chicken strips, lettuce, leaf spinich, croutons, dressing and a loaf of crusty bread. We had probably 3 meals of this (we were in the villa for 5 days). Great quick meal. Plus, on the lighter side. After all the heavy meals at WDW, it was great.

Also, for breakfast, we got pre-cooked bacon and eggs (so much for light!).
Good big breakfast before hitting the parks.
 
Quesadillas...bag salad with fake crab and ranch dressing, bread...scrambled egg burritos...frozen bean burritos placed in a baking dish and covered with canned chili, bake and top with cheese the last 5 minutes...roast chicken (from deli or done yourself), Caeser salad, french bread...wraps done with tortillas, deli meat, flavored mayo or mayo and salsa, fresh spinach, grated cheese, whatever your family likes...BLTs, use the precooked bacon, make sure you have good bread, red onions, and avocados, totally yummy...sub sandwich with a loaf of french bread and whatever your family likes...taquitos, salsa, and guacamole...pasta with garlic, parsley, olive oil, anchovies, and red pepper, serve with bread.
 
Take a crockpot and make soup, bbq chicken, ribs you can even make meat loaf and the meal cooks while your away. We stayed at fw cabins and did this it was great. You can look online for more recipes. When you get in from the parks fix instant mashed potates and salads heat up some canned veggies.
 
THere is a gourmet food company called Cugino's. They make great soup packets. One is a really yummy, REALLY hearty meal that is great in warm or cold weather. It's a chicken enchilada soup mix, and it works great with chicken or ground beef. Add tortilla chips and cheese and it is fantastic. We plan on taking it for one of our nights there. It keeps really well too. Tastes just like yummy enchiladas.

I saw some of their dip packages in our grocery store yesterday, but so far I've had to order the soups or pick them up from specialty shops.

Easy taco salad: soak a can of kidney beans in creamy Italian dressing for an hour or so. Tear up a head of lettuce. Add onions, cheese, tomatoes, crumbled up tortilla chips and the kidney beans/dressing mix. No cooking and super quick and easy. I was surprised at how good this was.

I agree...frozen foods for the week..add some salad, and grab some fresh bread at the bakery when you get to WDW. Maybe even grab a specilty ready made dessert, so you can feel like you are eating fancy..even though you will be eating frozen foods.??!!
