Too bad you don't like seafood, the Boardwalk area has some of the best in Disney - from the excellent Flying Fish Cafe to the Cape May Buffet (which I haven't been to).
If you haven't been to Spoodles, this may be the trip to go. Both breakfast and dinner there has been pretty good in the past - although Spoodles is one of those uneven places - one time you go and the menu is great and the food is fantastic, the next time the menu has been changed and the food is only so-so.
The Epcot area resorts have two of the best steak places at Disney - expensive steak - Yachtsman and Shulas. And Le Cellier - which is the best moderately priced steak place in Disney, is really not much farther than Shulas (but involves park admission).
If you've never tried Beaches and Cream, that's another favorite for an early (think 4:30) dinner. I'm not fond of it, but so many other people are that you should try it yourself. Its over at the Y&BC.
I haven't been to Big River or ESPN - neither gets really great reviews.
