Standing Mixer - keep or return? What do you think?

My SIL made the other bridesmaids chip in and buy me a pink Kitchen Aid stand mixer for my wedding present. She was convinced that it was the most appropriate bridesmaid gift.

That thing was in the Returns pile within a week - and I used the Macy's credit to buy luggage.

I've never regretted returning it. It has a HUGE footprint in my kitchen and that was the most annoying part of it to me, I have a decent sized kitchen but limited storage and although I cook and bake extensively I've never said - man I wish I had that gigantic mixer right now....

One of the best kitchen appliances I ever purchased was an immersion blender.

Second thing I've made with it: Marshmallows. I never could have made them without it I think - took 12 mins on high speed and came out great!
They're great for things that take longer--meringues, whipped cream, seven minute frosting... The motor just keeps going! It sounds liek you're enjoying experimenting with it--I'll have to try marshmallows myself, one of these days.

Thanks to this thread, I put the cheese shredder/sliced attachment kit on my Christmas list. Years ago I used to have a Salad Shooter that did the same thing. I used it all the time, but it broke a long time ago.

I used this recipe and followed it exactly - it helped to watch the little video: https://www.foodnetwork.com/recipes/alton-brown/homemade-marshmallows-recipe-1953933
I didn't stir the sugar/syrup mixture on the stove. I was surprised at how easy it was! I'm going to dip some in chocolate since that sounds tasty!

I need to try a frosting with it!

I added one to my wish list after grating cheese and carrots for soup tonight!!
