St. Patricks Day Dinner

Here's my Reuben Casserole recipe:

32 oz. sauerkraut, drained
1 lb. corned beef (from deli counter)
8 oz. bottle thousand island dressing
1 lb.swiss cheese
12 slices buttered rye bread cubed

preheat oven 350
spray 9x13 pan with cooking spray
bottom layer sauerkraut, then corned beef, the dressing then swiss cheese. Top with buttered bread cubes
bake 30 minutes
let cook slightly to set then serve

Enjoy!!
 
We are having corned beef in the slow cooker--does anyone know if I can or should add carrots to this?? Or add extra liquid?

Yes. I cook mine with carrots, potatoes, an onion and 1/2 cabbage (6 qt crock). I add about 2/3 cup of beer and 4 cups of water.

We had our St. Patty's day (corned beef as above) on Saturday. Sunday evening for dinner, I cubed all of the leftovers and fried it as hash and served with eggs. It was wonderful!

No Irish here, but from NYC and my hearts with them! I have my shamrock flag up and have the Corned Beef already boiling with beer on the stove.
 

Don't know yet -- it's my son's 5th birthday and he gets to choose what he wants for dinner (so far he says hot dogs :eek:)

Doesn't matter though, we're having our annual St. Patrick's Day party/birthday celebration on Saturday with all the Corned Beef and Cabbage and Guinness stew that we can eat!

I like the reuben cassarole recipe -- may have to add that to the menu too!

Today is my son's birthday too :) We are ordering pizza and watching Planet 51 tonight.

A local restaurant had this on there lunch menu for today. I can't wait to try it!
 
I was planning on making spaghetti (:laughing:) as we're not Irish, but those recipes for Reuben casserole look really good. Looks like we'll be having that instead! :thumbsup2
 
I am going to try to make my first corned beef! No cabbage but potatoes and carrots and homemade Irish Soda Bread.

I am doing the meat in the crock pot overnight tonight with Guiness, brown sugar and some spices (it didn't come with a spice packet so I'll have to make that up unless I run to the store to get some pickling spices) and then let it cool tomorrow, cover it with more brown sugar and brown in the oven for dinner.

Me too, but I have to put in cabbage for the family. THat is the best part to them. I did the meat in the crockpot as we speak. potatoes, home made corn bread and homemade baked beans...
Smells sooo good cooking.
I think we may have some gueniss though too UMMMM.

Our American Legion is having a corn beef, ham, cabbage, potatoes and corn bread dinner tonight. Since DH is a member, we like to support them as much as possible. :goodvibes
 
uh-oh. Corned beef and boiled dinner was a staple when I was growing up (it's not just for St. Patrick's Day!)

My mom won't get her corned beef and cabbage today. She's in Rehab after a lengthy hospitalization and she's on a restricted salt diet. It looks like I'll have to promise a version of this meal once she's home. (although, she won't get too much sodium on my watch!)
 
We are having chicken and cheese enchiladas tonight, mostly because it is the only night this week we are home for dinner, and it is a new recipe I have been wanting to make!

:rotfl: We're not Irish and don't like corned beef, so we're having basil pesto over pasta tonight. It's green at least. I also have brussel sprouts (kind of like cabbage, right?) and asparagus. I made the rainbow cupcakes from Family Fun magazine for dessert.
 
I am going to grill burgers.

I was going to make CB&C since my dh is Irish (which I guess means my kids are too) but I am not. He told me not to since he doesn't want to fight them to eat dinner.

I was going to make mexican/taco's but I will save that for tomorrow since we have Cub Scouts & I need a meal that is done when we get home.

So burgers & a salad which will be green.
 
My Uncle Pat makes his delicious Potato Stew every St. Patrick's Day. Nobody is "invited" over to his house, we just know that he preps his stew, stocks his house with yummy stuff and beverages, then heads off to the parade. So we all wait an hour after the big parade, then head over to his house. Not sure how the tradition started, possibly people showed up to drop off a birthday card/gift for him, and hung out for a party, lol.

Every year, I wonder "What if he doesn't want to have St. Pat's Day anymore...how do you cancel a party you never invite anyone to?"

Corned beef and cabbage here! I always make it in a pot on the stove, because that's the way Grandma says to do it (never mind she's German) and Grandma is always right!
We are having green rice crispy treats for dessert and calling them Blarney Stones, because I'm lazy and my kids are still young enough that I can get away with it!!
 
Well I have corn beef in the crock pot right now but we are having corn beef on rye sandwiches. Partly because that's the way I like my corn beef and partly because DD and I have family yoga tonight and dinner will be late. Can't downward dog on a full stomach!
 
I'm Irish! My father was half Irish and my mother was 1/4 Irish! My DMIL was 100% Irish so DH is half. I still can't figure out the percentage of our kids... Anyway, we're having corned beef and cabbage tonight!
