Spring Pantry Challenge

Breakfast this morning was some chocolate chip muffins and a banana. Lunch was leftover soup and a ham and cheese sandwich.

Dinner tonight I am still not sure about. We have had a ton of snow here and my Grandma walks with a cane and has trouble getting out of her house on her own with all the snow so we might be headed over there to help her get out and go to the grocery store. If we go today we'll have dinner with her or if we go tomorrow then we will have dinner with her tomorrow night.
 
I dug through the outisde freezer last night and found some dinnner rolls that were dated 12/28/08. They are becoming bird and squirrel food. Then I found some pepperoni bread, strawberry bread and a coffe cake that dh barterd for in December. So...it is almost empty!!

DH brough home lamb shanks that he found on the discounted meat rack yesterday. Why? I don't know. We have never cooked or eaten lamb shanks. Guess it is off to allrecipes to see if I can find out what to do.

Lunch today is leftover cassserole and salad.

Supper tonight - Zuchini stroganoff and pepperoni bread.

Tomorrow supper - Lamb shanks, baked poatoes and salad.

How do you make zuchini stroganoff? I bought some zuchini last night, and was planning on making beef stroganoff sometime soon, but zuchini would give me a way to use it up, and would probably be healthier.
 
Just changed my weekly menu around a bit. Just found out my disability carrier wants all the forms re-filled out again and the dr. actually had an opening tomorrow. It worked out, but it sure was stressful.

I made chili today for tomorrow, but now I need to defrost more meat for the taco's tonight. Not a major thing, but when you feel like crud it gets quite difficult to cook all the time. I so wanted to pick up the phone and order. But I didn't.
 

So my Grandma was able to get out on her own with a friend's help so mom and I ran to the store as they were having a great BOGO sale on meats and snack items. I have used up a lot of our meats in the freezer so this was an excellent opporotunity to stock up a little again. Also I have started sotcking up on snack items I can take with me to class instead of getting stuff from the vending machines.

For dinner we decided on hot dogs, tater tots and brussel sprouts.
 
Last night was our desperation meal as I all it. I have plenty of staples in the freezer and pantry but am sick of everything. So we had SOS otherwise known as chipped beef on toast.

Going shopping today. So far I have some requests for twice baked potatoes and fried chicken from my DD. One night will be steak. Another a ground beef dish. And the rest chicken. I have to go look up some recipes on the foodnetwork.com site for inspiration. I just got back from IHOP because we had a BOGO coupon. Our bill with drinks was $13.00. Not bad for eating out.

Today is my shopping day and I have plenty of coupons including two $5.00 Pillsbury coupons for cookie dough!

Today is decluttering day in our house so lunch was whatever you could grab from the fridge. Right now my Uncle is over fixing up some stuff and he is staying for dinner so we are having london broil (freezer), sauteed zuchinni, and oven baked sweet potato fries.

I think I will ask again, as my last post may have gotten lost in the thread. I have around 1# of cooked/de-veined, large shrimp. I have never cooked with it before, only did shrimp cocktail. Does anyone have a recipe that they like to use with cooked shrimp. It would be a meal for 2. Thanks in advance. Diane.

Im useing pita bread found in the freezer and Im gonna bake a head of time to make chips
refried beans ..fat free found in cubbard
peppers...that I bought this week
half bag of shreaded cheese... found in freezer
taco season..found in cubbard
oh yeas and some low fat sour cream..

with a side salad
desert: friut salad and cool whip....some fresh apples, oranges with a can of pineapple:wizard:

Hi there! Cooking with pre-cooked shrimp is pretty easy. Just make sure to add it to the end of your recipe; you don't want it to get tough from too much additional cooking (think just heated through a couple minutes).

You can substitute shrimp for chicken/beef in many recipes - you might have one in your repertoire already:

Shrimp Fried Rice
Shrimp Fettuccine Alfredo
Shrimp Curry (I like this on naan; Roomie likes it with rice)
BBQ Shrimp (baste and grill on a kebab stick)

I'm sure other posters will have more ideas! :goodvibes
 
I got too excited about cooking with shrimp and forgot to post my own news!

I baked Pike Parmesan and broiled asparagus for Roomie and me tonight for dinner. I caught the Northern Pike up in Canada this summer so it needed to be eaten soon! It was very good.

I also cooked up my (frozen) stir fry beef and made some delicious beef stroganoff. I'll probably put separate portions back into the freezer for dinners later on.

My fridge and freezer are really coming along! My goal is to have this all in order by January 21. The freezer should be free of random items and the fridge should only have long-term items (i.e., condiments). The pantry can probably hang as-is with the pasta and rice. Just trying to get all the odds & ends cooked up and eaten up! :thumbsup2
 
So far so good. Have only had to buy milk this month. But will need to shop this weekend, fridge is empty, we need butter, eggs fruit and veggies.

Freezer and pantry coming along nicely. I think I'll make some kind of greek chicken tonight. I have couscous and feta I need to use.

I don't think it is any healthiere but still good.

1 pound ground beef, browned
1 can cream of mushroom soup, I used low fat
1/2 cup water
2 cups uncooked egg noodles
2 cups sliced zuchini
11/2 cup sour cream, I used low fat.

Brown the ground beef, Stir in all other ingredients except sour cream. Simmer until noodles are soft. Add sour cream and heat through.

This gets mushy if you overcook it. But, it still tastes like stroganoff.

I've never put cheese in the freezer before. How long does it last in there? Does it need to be in anything special or just a freezer ziplock bag?

I so am not liking this week. DD has a drs. appt at 3:30pm and DS has Masteminds and neither of them put it on the calendar. I refuse to order out, so tonight is leftover chicken and dumplings and or chili. I ran out of bread (not sure how that happened, it never has before:confused3) so lunches tomorrow will be leftover fajita's/tacos.

So this weekend will be a challenge with all the leftovers gone out of the fridge. I will hopefully feel up to cooking one of the meals that got the boot for the week...

You could make a nice omelette. I don't really like omelettes though, I like a more frittata like substance with lots of cheese. Put some in eggs, then put the rest on a pizza. We like Bobbolli's.
You could also put some in a fettucini dish-- I like ragu's white sauce.
 
I would like to join the thread. It becomes scary when I haven't seen the back of the freezer or pantry in months! I already cleared out the freezer of all old food and am trying to feed the family on what essentials we have. Now on to the pantry. It's been pretty creative.

I look forward to reading all the great ideas people are posting on how to use up all the food in their pantries. My goal is to get it all cleaned out and up to date before we leave for WDW in 10 weeks.

Lunch was spaghettio's I found in the cupboard that I doctored up with some mozzarella cheese.

Dinner tonight is turkey burgers with the leftover baked sweet potato fries.
