Spring Pantry Challenge

Organized one cupboard this week and am really pleased with that. I don't even know if I'm going to make the lists again because I can actually see what I have...Will do the rest this week and the freezers. Gotta work on the soup...maybe tomato soup and chese sandwiches tonight.

Hard for me to believe another week has passed by... I kept to my schedule last week, but as for the soccer trip, it was expensive. I had budgeted for it and knew that I would have to spend, but I just dislike doing it. Oh well, they lost, so they won't be going to the finals. Good for me, bad for my DS. That leaves only one more tournament weekend left until the end of this season.

Sunday: Leftover pizza, salad
Monday: Hot Dog/Hamburgers, fruit salad
Tuesday: Chicken Caesar salads
Wednesday: Chicken meatball recipe, veggie, and fruit melody
Thursday: Pepper Steak over rice, veggies
Friday: Oriental veggies over pierogi

Saturday: as always, we will do what we can depending on the kids schedule...

This is going to be a rough month here, and I am hoping for a 50% success rate. We have so many soccer practices, exams, school functions, etc, that even I can't make heads/tails out of my to-do calendar:scared1::scared1:. Hope everyone has a great week. Diane.

Last night I was not feeling great but instead of just ordering takeout I made some grilled chicken with sauteed veggies and oven fries. It felt good to not just resort to ordering takeout.

Tonight we are going over to my Grandma's for dinner.

Tomorrow night is going to be shepards pie, yummy.

I for sure have to go do some shopping this week but am trying my darndest to clean out my pantry and freezer. This is the plan so far. I am doing my couponing and planning today:) I started working 3 days a week so I need fast meals for that day but usually most of my meals are done in 30 minutes. I have also began working out and dieting again so I am really working on content and calories. I have a $25.00 gift certificate for a family style Itallian restaurant that expries this month so we may have one eat out night.

Homemade chicken fried rice made with boneless chicken breast and left over veggies (had last night)
brats and homemade fries tonight
Chili with mac noodles (Monday)
tilapia most likely Friday
some kind of pork dish most likely a roast in the crock pot
stuffed chicken breast with feta (a carryover from previous weeks)
kielbasa and buttered noodles
sloppy joes?
salad nite (usually have one a week during summer) possibly taco salad'
have a craving for stuffed peppers or cabbage rolls

Trying to stay on track here.

Last night - Chops on the grill, Teriyaki noodles from the pantry, and brocoli.

Tonight - Sloppy Joes using up some ends of BBS sauces, hamburger buns using up 2 partial packes and probably potoate fries.

Tomorrow - Fish, Rice and Brocoli in the rice maker.

I haven't planned the rest of the week yet.

tonight i made alfredo sauce from kraft.com-it came really good and only took 10 minutes to make. tommorrow we will be having breakfast for dinner. wed. we will have quiche and salad, thursday will be shepards pie, friday will be spaghetti with either meatballs or sausage or both, with salad. sat-chinese (i was given a gift certificate).

everyone's menus look really good!! keep up the good work ladies!!! :thumbsup2

My freezer is close to be empty! Tonight I made parmesan baked cod fillets, frozen asparagas and mashed potatoes. Tomorrow night I will finish up leftover sides by doing hot dogs, potatoe salad, baked beans and carrot/cucumber sticks.

What I need to do is NOT get nervous and stock the freezer up again! I'd like to just buy fresh what we need for that week. We'll see how that goes.

I forgot to take the meat out of the freezer so we did not have shepard's pie, However we had Easy Chicken and Cheese Enchiladas using a campbell's soup recipe and boy was it yummy. I plan on having the leftovers for lunch today.

Tonight will either be chicken apple sausage with german potato salad or spaghetti with meatballs. We might go see "Letters to Juliet" this afternoon so it depends on what time the movie is.

Bumping this thread back up

We have been doing well so far. Tuesday night we had homemeade mac and cheese as it just sounded good to us and we had everything in the house for it. Wednesday night we had roast beef sandwiches with pasta salad and fresh fruit. Last night we ordered in because neither of us felt good but we had a gift card so I did not feel that bad. Tonight is going to be grilled cheese and tomato soup with the left over fruit.

So will there be a new thread for summer, or staying right here? I haven't participated before, but I'd like to!

I am in for continuing the thread through the summer. It is nice to have a place to plan out meals and get ideas from other budget savvy people.

Last week went okay. Dinner last night was taco's for me before the game, which I went to with my aunt since my mom was sick and my mom had chicken noodle soup.

Tonight we are having crockpot potato and double corn chowder as my mom still does not feel well and it is her favorite. Tomorrow night the plan is to have pork stirfry.

We are doing pretty well. I only spent $40 this week in groceries! Yay! Last night we had a bagged salad and the last of a loaf of sourdough bread made into parmesan toast.

Tonight is my best budget meal of all! I am roasting a chicken, carrots, celery, mashed potatoes and biscuits. The leftovers from tonights chicken will be seen in several meals this week...chicken black bean quesadillas, cheesy chicken enchiladas and chicken salad sandwiches with lots of fresh fruit! $5 chicken for four meals!

We just got back from a week at Disney and I cleaned out the fridge and organized the pantry. We don't have much left in the freezer or the pantry so I am going to have to shop but I'm looking for sales to stock up on stuff.

Tonight we are having steak, stuffed potatoes and salad.

Tomorrow is grilled burgers and birthday cake!

The rest of the week in some order will be:

Shrimp & parmesan pasta
rueben sandwiches
Breakfast for dinner
Chicken Parm

i found an area food warehouse not too far from home. i found deals like 99 cent boxes triscuits and wheat thins, 99 cent bags of shredded cheese, wraps 50 cents, deli roast beef $4.29 for a pound and a half. this past week i spent $18 there and 2 dollars at the local bread outlet. for $20 i got four bags of groceries!!!

last night we ate at my moms. tonight is leftover hamburger helper. tomorrow we r having spaghetti with Italian sausage. saturday will be tacos, and rice. i will make some grilled fish, rice or potatoe and a veg from the freezer on sunday.

i am holding off on doing any shopping until memorial day. my new food budget starts on the beginning of the month . i will be posting what i spend in grocery shopping as i am trying to be accountable to my grocery budget of $200. i need eggs, parmasean cheese, and salad. i also plan on hitting the warehouse again this weekend to see what deals i can find.

hi swimnoid welcome to the thread!!!:cool1:

Welcome to the newbies... I have been off schedule all week. The weather heated up and I found it hard to cook. The house would hit 89 and I would be sick to my stomach. Like tonight, I picked up Chinese... The good thing is that I only spent 45.00 on groceries this week.

I will most likely keep it simple next week also, but I will definetely stay on my meal plan. Gotta wipe myself up, forgive myself for the blip, and get back on track...

See you all on Sunday!!

Things have been good this week. Cooking something everynight. Except tonight a friend treated mom and I to dinner.

Same thing. It's been hot here all week! I recently started a job three days a week. I've been getting home around 5 so we aren't eating til 6 which is throwing off our schedule a bit. Since it's so hot I changed our menu so I wouldn't have to use the oven so much. I spent around $50.00 this week on groceries. I didn't use any coupons this week like I normally do. I just had to pick up a few staples and meat.

This is what the menu was for this week
Brats and hotdogs with stuffed potato salad
cold tuna salad with shell noodles and peas
tilapia and garlic new potatoes tonight
flank steak and angel hair pasta (made on my indoor grill)
shrimp kabobs with rice
sloppy joes or hamburgers with some side
feta stuffed chicken breasts made Monday
Hope everyone has a great Memorial day!

ok i know i said earlier that i was not going to shop till monday..well that didnt happen. i went to cvs. my bill before extracare card, coupons and extracare bucks was 21.86. after all of the discounts 4.07. i then got a coupon for $3 off my next order of $15 and $2 in extracare bucks.

i went to petsmart and a bunch of coupons for catfood and treats. my bill before savings was 11.36. after savings i paid 5.90. i also spent $22 at the warehouse and $13 at pricerite. what i spent yesterday will be going toward my $200 grocery budget for next month. so i have spent 45/200. my freezer and pantry are really full so we should be fine.

meals for the coming week
tonight we will be eating at my mothers
spagetti, red sauce, italian sausage, salad (2 meals)
grilled fish, rice, frozen veg.
dirtyrice, salad or frozen veg
shepards pie
