Is this doable or recommended? I feel like we may get the best of both worlds, but can Disney provide transportation from one resort to the other the day if the switch, and our luggage?

Yes, Disney will move your luggage, but it will take a fairly long time. They don't provide rides to the new resort though...at least not as a rule. I like to just take a cab to the new resort, with my bags.
If I don't care when I get my bags, I hand them off to bell services first thing, then I go to a park. I leave that park, usually after lunch, and go to the new resort and get checked in. But, doing it that way means your bags are away from you until early evening.

We've done a few splits and we've never had a car. Disney will transport your luggage, but it will arrive later. Some people then go to a park and bus back to their new resort when they're ready.

We find it easiest to hop into a cab with our luggage as soon as we check out and head to our new resort. Generally, our room is not yet ready, but we just store our luggage with Bell Services and off we go. Last year we transferred from the BC to Pop in a cab. It cost about $10. Totally worth it.

We did a split stay last summer with no car and it was super easy. Disney will move your luggage but it could take awhile for it to show up at the next resort. We just took a cab from our first resort to our second resort bringing our luggage along. When we got to the second resort, our room wasn't ready so the resort held our luggage for us. We are thinking about doing a split stay again this summer but we'll have our car this time. We love split stays!

We did a split stay without a car last trip. Twice. Long story... Anyway we did arrival night at AoA then moved to the GF the next morning. I needed our luggage to be at the hotel earlier than the 3-5pm window, so we took a cab over to the GF and checked our luggage with bell services at the GF until our room was ready. We did our departure night at AoA, and this time Disney moved everything for us. They pick up your bags between 1-3pm, so hypothetically they arrive at your new resort between 3-5pm. We spent all day at MK, then took the AoA bus and our luggage was in our room!

As others have said, no car necessary. We've always simply given our luggage to bell services in the morning, gone to a park and then to our new resort in the late afternoon. After check-in, we simply went to bell services, let them know we were there and they delivered our luggage to the room. Super easy.
