I have flown Spirit several times, they and Allegiant Air are my airlines of choice. I like cheap. 
Have never had a problem with Spirit. One time they changed our non-stop flight to include a stop and I just called and politely asked if we could be put on their later, non-stop flight and they did that. Easy fix.
One time, after a cruise with my parents, we were not scheduled to fly out of Orlando until around 6 p.m. I had not booked the earlier noon time flight because with elderly parents I wasn't sure we'd make it in time. But we did get to the airport in time and we politely asked if there was room on the noon flight, and could we get on that one instead. No problem.
We rarely pay for our seats. Our flight to Florida takes about 3 hours, I don't HAVE to sit somewhere specific for 3 short hours. Even if DH and I were to be separated (and that has never happened) it wouldn't bother me for that short of a flight. Now if we were flying overseas, on a 10+ hour flight, I would probably pay for a seat choice and to make sure DH and I could sit together for that long of a flight.
We bring our own water bottles and snacks if we want them, or we will buy theirs if we want to splurge. After all, we're on vacation.
