Spice Road Table and Illuminations

Okay question about Spice Road Table and Illuminations.

This is my husband's and my new favorite restaurant at Epcot. We have been here twice for "lunch" and absolutely loved it. Why do I put lunch in quotation marks?? Because we are passholders and we go to Epcot so frequently that we tend to take our time leisurely drinking our way around the World - hence the reason we have fallen in love with Spice Road Table. Our "lunches" at SRT have actually consisted of 2 - 2.5 hour lingering meals of sampling their delicious small plates/sharing entrees and unusual adult beverages while relaxing under the outdoor patio and gazing across the water. Given that the place tends to be dead during the day - they couldn't care less how long we stay, in fact we have had some delightful conversations with the cast members and they have even told us how to make some of our favorite dishes!

We have heard that SRT is a great spot for watching Illuminations. I must confess that we haven't watched Illuminations in years because we try to beat the mass of humanity leaving the park immediately afterward (however we did hang out to do the Tequila tasting once - superb!). We were never ones to sit for hours prior to a parade or fireworks to claim the perfect spot for viewing. However, given our preference for lingering over our "meal" at SRT, what is the acceptable etiquette when making dinner reservations in the hope of being able to watch Illuminations from the patio? We haven't had "dinner" here before so I don't know how busy it is but I would imagine it is very busy around Illuminations seating time. Would it be rude to make a 7:00 ADR given that we usually linger at SRT for 2 hours? Is there a time limit set on meals for those restaurants with prime Illuminations viewing areas?

What do people suggest? Any one out there who has watched Illuminations from SRT and can share their experience with timing?
