Which hotel are you staying in? I have only really gotten regular activities at Disney's Grand Californian... they will put a little newsletter in your room each day to let you know what is going on. They usually have an early morning activity at either Sephora or Build-a-Bear. They have a hotel tour called "The Art of the Craft", and a family scavenger hunt - I don't know about a tour for teens, maybe that's something new. They also have an early morning tour of DCA which gets you in line for Soarin' before the crowds are let in. They also have storytelling and camp fires at the grand hearth (this is open to the public), I think they do something like this in the little movie room at PPH too, not sure. You also are privy to information like when they do test runs of holiday fireworks before the official start date...
At all three of the hotels you will get early entry for all days it is offered during your stay... this is nice for AP holders who never otherwise get EE.
