Special & nonpark things to do on 12 day trip

In February we have 12 days at WDW and we're going for 2 weeks this September along with a short trip to Universal, so we won't feel we have to spend all day everyday at the parks in February.
There are 7 of us including 5 kids ages 2-11. We are DVC members and will be staying at Beach Club Villas, Bay Lake Tower, and Villas at Wilderness Lodge in February. So we are allowed to pool hop (if the weather is nice enough for swimming.)
I'm not necessarily looking for extra pay things like the new Wilderness Tour (although that looks cool.) But even just suggestions on how to spend a day that may be a little different than typical. For instance, one day we have planned rope drop and a few hours at MK then back to our hotel to rest a bit and maybe use the pool then over to Port Orleans for dinner and Yehaa Bob. Another day we plan to sleep in, have breakfast at Kona (our favorite!) and use the Poly pool. Go back to our hotel (Bay Lake) to get cleaned up and early dinner at Ohana then fast pass rides, parade and fireworks at MK.
Can you suggest more ideas for us, please? We don't spend many evenings at parks, but would like too try it more now that our kids are getting older. How are EMH evenings? Never tried them!

Arrival day...Check into Beach Club....Dinner at Beaches & Cream...explore Boardwalk area
MK rope drop...BOG lunch...return after parade...dinner at Big River Grill
MK EMH...Liberty Tree Tavern lunch...pool/rest...Epcot with FP+
HS rope drop...Sci-Fi lunch...open evening (DTD?)
HS EMH...pool/rest...Epcot with FP+...Garden Grill dinner
AK EMH and all day... Yak & Yeti dinner
MK later morning with FP+...check into BLT at Contemporary...pool/rest...Chef Mickey's dinner...EP evening EMH
Sleep in...Kona Breakfast...Poly pool...Trader Sam's...rest and clean up ...MK evening EMH
MK with FP+... rest...Ohana dinner... fireworks from BLT lounge & water parade
MK EMH...Crystal Palace late breakfast...pool/rest...explore Port Orleans..Boatwright's dinner...Yehaa Bob
HS rope drop...lunch (?)...check into Wilderness Lodge... WCC dinner
MK rope drop...pool/rest...Trail's End dinner...Chip & Dale sing a long
AK EMH...Tusker House late breakfast or early lunch...rest...CRT dinner and evening at MK with FP+
Departure day

I guess it's full enough! and sounds pretty good, but if there are any unique ideas I can switch things around. I'd like to get it figured out before the 180 mark (in about 2 weeks) when I look forward to making our ADRs.
 
Make sure you have a back up plan for the pool days- when we went for 12 days in February we were able to swim once the entire time- it was just too darn cold. On the days the kids needed a break away from the parks we checked out the community halls

Also- you mention POLY pool- DVC members can't hop there and there are gates in place where you have to scan your magic band to get in.

DisneyFirstTimer10 is correct. DVC members can no longer hop at the Poly pool. There are plenty of other things to do though. Have fun!

The community halls? Like at BW, SS and OKW? Or game rooms/crafts like at BLT?
Good to know about Poly. Somehow I missed that. Any other pools that aren't hoppable? I know SAB at BC, but we're staying there for part of the trip, and maybe BLT, but we're also staying there.
 
pricey and non wdw but suggest you take a look at Discovery Cove dolphin swim etc.
