Spare Ribs and Wild Rice

SPARE RIBS AND WILD RICE


3/4 cup wild rice

4 pounds pork spareribs cut into four rib serving size

1 tablespoon prepared Pork Seasoning

2 cups V-8 vegetable juice

2 tablespoons Worcestershire Sauce

Bottled hot sauce to taste

1/2 teaspoon salt

1 teaspoon pepper

1/2 teaspoon Thyme

1 large yellow onion, peeled and cut into one-inch dice

2 cloves garlic, crushed

2 tablespoons Grey Poupon or other Dijon mustard

Place wild rice in a large bowl and pour 6 cups boiling water over. Allow to sit four hours. Drain. Arrange rib pieces in a baking dish and sprinkle with pork seasoning. Bake at 450 degrees for 15 minutes or until lightly browned. While ribs are baking, stir together all remaining ingredients, except rice. You may use as much or as little of the hot sauce as you want.

Using a large casserole dish with a lid, place half the rice on the bottom and then place half of the ribs on top of the rice, pour half of the sauce on top. Repeat layers.

Bake in a 350 degree oven for two hours stirring twice.

Serve with a warm loaf of bread and lots of napkins
