I have fresh tomatoes that need to be used. I want to make sauce out of them, but I have never used fresh tomatoes. Can anyone tell me what I need to do to the tomatoes? Do I need to cook and peel them? Can I just blend them w/peels and raw and then cook them?

I use them most times when making spaghetti sauce. I just chop them on a cutting board and cook along with the other ingredients being used.....no need to peel. Just add minced garlic, onions, the tomatoes and any other herbs and spices you like. Sometimes I'll use a can of Ragu (a thick one with roasted red peppers) and add the fresh tomatoes to it for an even richer taste.
