Can I check in online, but not print my boarding pass at home and pick it up at the airport?

yes you can...

when they give you the boarding pass at the airport it will have a R beside the number you get to indicate it is a "reprint"

I will have my laptop at disney but no access to a printer, so I could check in online and just pick up the pass at the airport. Where would I pick it up at this airport? What is the advantage of doing this vs checking in at MCO?

you could get it reprinted at any place at the airport that can print boarding passes ...skycaps, counters, kiosks and departure gate

the logic behind doing it early would be to make sure you get a reasonable boarding pass in the A group hopefully

sometimes, even when you get to the airport early, they are into the B and sometimes even C groups as far as boarding pass distribution goes
