sooo many questions!

I have been to Disney 5 times and never rented DVC points and have no clue how to do it. I need the space of a 2 bedroom villa now with teens though. But I have no clue what I am doing and have 3 questions :
Is it worth it to lose the free dining and have to add it back on and pay for it?
How do I add on tickets and dining?
once I cook it, its through someone else, and I have no control over seeing my ressie online or anything right?
