Some thoughts about Low Carb Diets

Good Morning! Now that the Low Carb diets seem to be everywhere and you still have the people claiming we are all going to die of heart attacks I just wanted to take a few minutes to notice some changes in me.

#1 - I like veggies. My parents were not veggie eaters I was brought up on celery, green beans, peas, and corn. It wasn't until about 4 years ago I discovered Zucchini, mushroosm, peppers, asparagus, and artichokes. And I recently discovered Cauliflower and broccoli. On my low carb diet I eat a veggie with almost every meal. Something I never did before. Honestly the only time I added a veggie to my meals was when my Dad was coming over for dinner. My sides no longer exist of starchy rich items but of true genuine veggies.

#2 - I still choose lean meats. I think the conception is that we are all going to start eating bacon for every meal. While yes I do allow myself more bacon I am also eating a lot of fish, chicken, and pork. Occasionally I'll enjoy a cheeseburger (no bun) or a steak but for the most part it is lean meats. The summer will probably be harder once I start craving bratwurst all the time.

#3 - I have more energy and are more awake in the morning. People have even commented about it at work. I am no longer grumpy Amanda until 12pm.

#4 - I eat 3 solid meals a day. I use to skip breakfast all the time now I make sure to eat something.

#5 - I am no longer bloated from all the salt added into soups and "pre packaged meals" We use to live on Hamburger Helper and stuff like that - do you know how much salt is in there?

So I have determined that I am actually heathier now then I was before!

Although we have always been veggie eaters at my house, it was probably heavier on the "corn, lima bean, peas" sort of veggies, not cauliflower, kale, salad greens, zuchini, squash,etc... like it is now.

And like you, I might have an occasional hamburger, we eat a whole lot of chicken, turkey and fish. And I don't mean Van deCamps breaded, fried fish. I go to the fresh seafood counter and pick out a couple of pounds of fresh fillets. I try new kinds all of the time (as long as they are a mild fish:D ). I hardly EVER did that before.

You hit it right on the nose.

I couldn't agree more! And I was one of those skeptics for years!

I eat better now than I ever did, and so does my 11yo son. We seem to enjoy and taste our foods also.

I have never been much of a red meat person so I still eats lots of chicken, fish and turkey. I love the idea that I can eat butter since it's my favorite condiment! My son loves the fact that he can still have mayo!

I'm off caffeine, GERD pills and sleeping medicine for the first time in YEARS. We both have more energy and verve and I can honestly say with all the stress I've been going thru, this is the best part of my life.
 

but it's so nice that filet mignon is on the plan too.

We've always eaten a variety of things - now it's fun to experiment and still be low-carb. We had spaghetti squash alfredo w/shrimp last weekend - OMG it was so good!

Other advantages: no more lightheadedness from low-blood sugar. Not feeling hungry, ever. My hair and fingernails grow fast, long and strong! All that water makes my skin glow!

Laurie have you posted that recipe on our healthy eating board? I would love to try that yummy shrimp alfredo.

I was a skeptic for many years about Atkins. I was told by physicians whom I loved and trusted that it would kill me. It wasn't until I did my own research and read the studies in the bibliography in the back of the Atkins book that I made the most amazing discovery....Atkins <i>won't</i> kill you.

I love this way of eating and I never plan to stop, it's saving my husband's life. We love it :)
