We got there right at closing once and got on the last Soarin ride of the night. There were maybe 10 of us on the ride, they seated us front and center. It was so cool... my kids still talk about it

Both will have shorter lines, as many (most) Epcot guests will be in WS getting ready to watch IllumiNations.

Let me just say, the reason we got to ride Soarin as the last right of the night is because we had baby swapped and it took my dh and two sons forever to finish their ride of soarin (no FP). The wait that night was crazy long even though we got there as illuminations was starting. I was worried they wouldn't let me ride it as I waited and waited. But nope, Disney will always let you ride, so when my dh and older two boys were done I got to ride it with them on the last ride of the night. When we left the ride the park was officially closed (it was almost 30 min after park closing). So in all honestly, the ride line was not short, it was just a cool experience to be last. That was my experience, we went the week after easter for that trip. I have never ridden the other later at night so can't say for sure.

The popular rides, completely ignore the wait time if your doing this. To some degree it's wrong and higher to help parents get their kids out of the park. I've never waited more than about 20 minutes for a popular ride if I jump on right as the park closes. The park is not fully closed until everyone in line has rode and left the park. If your on a ride line as the park closes, you will get on your ride and there will be transportation to get you back to your resort. You'll also get the walk out of the park with almost nobody around and your not rushed. You just can't wander off without someone reminding you where the bus and exit is or get into another ride line.
