So when are eggs bad?

Just staring in the fridge for dinner. When do eggs go bad? They have a 'sell by' date on them, but what is the 'eat by' date?

We are on a very tight budget, and I know I have served my dh some VERY questionable omlets in the past :rotfl: but now that we have ds I figured I should ask about this (he hates eggs now but that will probably change at some point).

So how long after the sell by date will you eat your eggs?
 
I have read about a month if you have kept them in the fridge. I know we have eaten them a couple of weeks after the sell-by date and never been sick.
 
My grandmother always said if the egg floated in cold water it was no good...a bad egg...Bwahahahah
 

I pay no attentioin to the date - if they don't float, we eat 'em!

Me too. I didn't even know that eggs had an expiration date. I don't think that they did when I was learning to cook 40 years ago.

I just use the eggs when I need them. When I was traveling a lot for business I probably kept them for months.

The only bad egg I ever had was from a carton that I'd just bought. I was making an egg casserole and using 3 dozen eggs. I'd cracked about 2 dozen when I came across the bad one. It was black and really yucky.

I went back to the store and made them replace them all since that one bad egg ruined the rest. Now I've learned not to crack a bunch into the same container.
 
Rule of thumb:

If an egg floats in a glass of water, it's bad; if it sinks, it's fine. I promise.

Oh, and if it kind of floats in the middle, I personally throw it out!

See, I used to use this rule.....but....the other day I was hard pressed for eggs and the ones in my fridge were atleast 3 months old. Half floated and half sank. I cracked one that sank and smelled it....it smelled fine..so I cooked it.

To make a long story short..all the eggs were good, I haven't gotten sick yet! ;) :p

Hey, look at it this way - some cultures eat fermented (aged) eggs as a delicacy.

The other thing I've heard is to look at how the yoke sits. You want a firm yoke that sits high on the white. If the yoke spreads or dissolves into the white and doesn't separate well, the egg isn't very fresh. Still, it is edible. Often times, older or lesser grade eggs are used for scrambled eggs, as long as they don't have an off taste. ;) Really where freshness is important if you are doing something like meringue where it is critical. If you were making a lemon meringue pie, I'd tell you to buy new eggs. Since your not.... No worries!
 
I keep mine for months, never had a problem. I'll have to try the float method, never heard of that before. I won't hard boil them until they are at least 3 weeks old, can't peel them if they are to fresh.

Wow, you are lucky to have access to fresh eggs. It is hard to find them where I live. :rolleyes: What I wouldn't give for my own chicken coop and laying hens. ;)

When I was growing up in Ohio we had an "egg man", he came to the house, can't remember if it was every week or every 2 weeks, and delivered farm fresh eggs. I wonder if anyone does that anymore. By fresh I meant 3 weeks after I buy them at the store, not really sure how fresh they are to start with.
 
So when are eggs bad


When they take your car without asking, stay out til all hours of the morning and leave the gas tank on empty. :rotfl2:

I have sweet memories of "Shelly the Eggman",
which for some reason reminds of The Beatles :teeth: :rockband: .
Shelly was a nice man who delivered
fresh eggs to our house every week,
I can still see him pulling up to the curb and
leaning out, asking how I was (I was very young, probably 4 or 5),
and he always had a little treat for me.

Oh yeah, did anyone here know that many stores used
to wash eggs that didn't sell?
They'd just take the cartons, send them back to the hatchery,
where they would be washed by a machine and put
back out into a new, up to date box.
Now, what washing them had to do with freshness
is anyone's guess!
People had absolutely no idea how old the eggs
were in any given box in the markets.
This was recent as of a few years ago, and was reported on the
weekly news shows.
I think when it was found out the states where
it was discovered put laws into effect prohibiting "egg washing."

I buy eggs on sale and use them to bake...I have kept them in the fridge for more than a month and so problems here.
