Ok, my first real cheat in 7 weeks. But after losing only 10 lbs, I feel I deserve to cheat a little, this diet is not doing it for me.
ShopRite was having a lobster sale. I bought 4 3-4 lbs lobsters. So last night my son and I each had 3 lb lobsters with butter. I ate most of mine, but he finished the rest.
Tonight my son made Lobster Bisque using the recipe in my Disney Cookbook. He made 4 batches. He used the meat from 2 of the lobsters, fried 1 cup onions and 2 cups carrots, then put the veggies in the broth form when we cooked the lobsters. HE added some spices, cayanne pepper, Parsley, salt and pepper. Also,1/2 cup of sherry (38 gms of carbs in 1 cup) and 4 cups white cooking wine (0 carbs) And then used 1 quart of light cream. We couldn't find heavy cream anywhere, guess alot of people are on Atkins and buying it all out.
The killer was the rice for thickener. The recipe called for 1 cup per batch but he used 1/2 cup per batch. I ate a bowl, which came out to about 1/4 batch so I had 1/8th cup of rice.
I am figuring the total carb count for the bisque was under 40 carbs.
I took two of those carb reducing pills made with white kidney bean extract before eating the soup, but since I didn't eat anythng all day I don't think I did too bad.
The only problem is....He made 4 batches, I have 6 Glad storage containers filled with Bisque that are calling my name. Peggie
