I've cut up 3 chicken breasts and cut them into strips and crumbed them with some cajun seasoning and breadcrumbs. I'll shallow fry them and serve them either cold with a salad or hot with a salad. It's way too hot here for anything but salad :confused3 The kids might put theirs in tortilla bread and have a wrap instead.

I'll finish off with a lime or pineapple Zooper Dooper :goodvibes

Sport night tonight, so homemade hamburgers with bring home chips for dinner tonight. Simple is what it needs at 7.30pm when noone has been home.

Might get a little more fancy tomorrow. Maybe

I am out for dinner with the school canteen volunteers -
DH and the kids can fend for themselves! :rotfl2:

Because it is so light later I didn't get around to cooking the chicken so I threw a couple of pizzas in the oven - less mess to clean up. Chicken for tonight. Plus I'm making a pineapple upside down cake as well.

Have taken out chicken but am thinking a fried rice type concoction tonight. No oven me thinks and something we can just graze at when we are hungry.

A bit late to this thread, last night we had sauteed sliced chicken & a few slices of hot pepperoni chopped up, added a can of crushed tomatoes and other bits and bobs to make a sauce, poured over cooked pasta topped with mozzarella and baked in the oven. It was yum and a good way to use up bits and pieces from the pantry & fridge before we go away.
Tonight we have the inlaws round for our xmas dinner so will have butterflied leg of lamb on the bbq with baby potatoes and a couple of salads - one just a bag of mesclun mix with a few other greens thrown in and the other one roast carrots tossed in morrocan spices, with feta and mint sprinkled over the top and a lemon vinaigrette to go with both. For dessert I am making tarts filled with chocolate ganache and topped with strawberries.

So, best I get off my bum, out of my pjs and start making tarts and tidying up this pig sty we live in :laundy:

Sounds yum. Both nights that is. Funny, we are using up leftovers from my mum being here while we were away. She makes different things to us which is great but it's not our natural cooking style. So weaning out Grandma food then back to our scheduled eating.
