So we are not really Star Wars fans. I want our family to start watching the movies though because I do think my son who is 6 will like them. I mean he already thinks he likes them just because the hype on characters etc. Like has some Star Wars toys. We are going to DL in September over Labor Day week and I am not sure we'll try and do anything in that land depending on crowds. We are literally going in the parks after Labor Day like Tues-Sat. So praying the crowds are doable.

But I honestly have NO CLUE whats even coming in that land haha ..
 
ok well you have some time, so I suggest watching the films to at least familiarise yourself with the story, the characters and the world.

Star Ways Galaxys Edge will be a remote frontier outpost, part of the Star Wars world but it is not in the films. It will be similar to other Star Wars planets. The timeline is set during The Force Awakens and The Last Jedi. There will be references to The First Order and The Resistance.

There will be a full size Millennium Falcon ship in the land.

At the moment, only one ride Millennium Falcon Smugglers Run will be open when the land opens on May 31. This will be a simulator ride, where guests will pilot the Millennium Falcon spaceship.

Olgas Cantina will be the food / restaurant place

The Black Spire Outpost will be the shop / merchandise area

The whole land will be an immersive themed experience
 

By the time you are there, hopefully the second attraction - Rise of the Resistance- will also be open in addition to Smugglers Run.

In addition to Oga's Cantina (which will serve food and adult beverages, though alcohol cannot leave the premises) , food will also be available at:

Docking Bay 7 Food and Cargo – Chef Strono “Cookie” Tuggs has traveled throughout the galaxy following his longtime gig as the chef at Maz Kanata’s castle on Takodana and brings exotic flavors and unusual dishes to his traveling diner “Tuggs’ Grub.”

Ronto Roasters – A recycled podracing engine fires up a spit of exotic meats, meticulously turned by a former smelter droid, 8D-J8. Guests can even sample some of the tasty Ronto fare.

Milk Stand – The place to go to get your farm-fresh blue milk or green milk, direct from Bubo Wamba Family Farms.

Kat Saka’s Kettle – One of the many street market stalls, this grain vendor sells the ever-popular Outpost Mix (sweet and salty popcorn snack with a hint of spice).

There are several shops as well (Black Spire Outpost actually refers to the whole "town"). Some will be aligned with the First Order (First Order Cargo) or the Resistance (Resistance Supply) and others will be "traders" with various items (Dok-Ondar’s Den of Antiquities) including one where you build a custom light-saber (Savi’s Workshop – Handbuilt Lightsabers) that is a full immersive experience I'm guessing is something along the lines Ollivander's Wand shop at WWoHP. That one is limited how many guests can participate at one time so it remains to be seen how that will be managed. There will also be a Droid Shop where you can build a custom RC droid that will "accompany you" throughout the land (and home). The droids will be able to interact with parts of Galaxy's Edge while you are there and possibly "unlock" things for you(but the idea of kids- and adults- "piloting" these RC droids all over the park outside Galaxy's Edge worries me a little!). My understanding is neither the custom light sabers nor the droids will be particularly cheap so that may limit how many folks actually go through with building them... or not. We'll see.

Galaxy's Edge will be a whole new experience for DL. It's supposed to be truly immersive with CMs encouraged to develop an actual character or role they are playing with alliances (or not) and guests as well via the Play DisneyParks app where you can engage with the story and develop your own alliances. It sounds very exciting and cool. But there's still A LOT we don't know.
