I really think you'd be fine with Gringott's. At the beginning, you think you're about to have a massive drop, but it's really on par with DL Pirates. Then it's mostly sideways motion from one scene to another--kind of like TSMM for longer stretches. And the 3D effects are nothing like Simpsons--more just like a regular 3D movie. I say take a LD Dramamine and come back here and curse me if I'm wrong ;)
OP here. I promise not to curse you, and may get up the courage to try it! Thanks a lot for weighing in with details. I'm fine with Pirates and TSMM, so Gringott's sounds potentially promising.
 
I have used a motion sickness medicine called Bonine in the past and it works great and doesn't make me drowsy. I could NEVER ride any motion simulators or things that go up side down or things that spin. With Bonine I ride EVERYTHING.

I'm I certified ride chicken and due to an inner ear issue can't ride anything that spins, turns to much, goes upside down, etc. Having said that, with Bonine, the only things I can't ride are:

US: The Simpsons and RRR. I can ride the Mummy once, but that's it for the day. Same for Men in Black (the spinning at the end gets me).

IOA: The Hulk, Dr. Doom, Storm Force (teacups - too much spinning), both coasters in Harry Potter. I also have to close my eyes on the down part of Spiderman.

So stinking true. Although it wasn't awesome to spin, it's far less awesome to just sit there. Incredibly boring, actually. They took what was a ride we really liked (and I dealt with the spinning) and turned it into something we'll probably never ride again.

I recognize that this is not the OP's likely point of view.
 
I don't like LOUD rides, found best it to carry ear plugs to muffle sounds. I also can't handle spinning and very afraid of big drops and heights. I was under impression Mummy was not as intense as it really is! rode it once and too chicken to do that again.
Here is a list of rides I was able to do
Simpsons- one of favorites!
Spider man- no issues with it at all, fun!
Forbidden Forest- rode it twice, had to close eyes some and after last one I was not feeling well for rest of the day, mainly because I kept my eyes open more than previous.
Disaster- easy
Cat in the hat- easy, even with spinning
Men in Black- was OK, a bit too much spinning but it was only a few seconds
Shrek- Gave me headache (was not worth IMO)

My family and I are going for spring break early April. Haven't tried the Minions and plan on doing it this trip it line is not too long, anxious a tiny bit about Grifford's drop but I'll try it and looking forward to ride Transformers!
