So help me make dinner with these random ingredients -- fish tacos?

My goal for this month is to go shopping, and then eat the things we bought. Sounds simple right? But I have a tendency to decide that I must have something different and stop at the store, or to buy the ingredients for X, and then decide instead to make Y and end up with random ingredients.

Here's what I have right now that I'm thinking I can combine.

Tilapia
Lime juice
Garlic
Lettuce
Sharp shredded cheddar
Salsa
Guacamole
Tomatoes
frozen corn

So, I'm thinking I cook the tilapia like for fish tacos (pan fry with garlic and lime? I have never had or made fish tacos), and serve it on a salad (lettuce, chopped tomato, corn), like taco salad, with salsa and guacamole instad of dressing.

Does anyone think that would work?

Should I bake the fish instead? I also have brown rice, I could make taco style fish and mix it with rice and just serve a salad on the side if people thought that would be better.

I have cabbage, and biscuits (aldi's brand, I'm sure they'd do fine) and flour, but no cornmeal. I bet it would work without right? Then we could have real tacos.

I don't have sour cream or chipotle chilis. I could probably spring for a container of plain non fat yogurt (my go to sub for sour cream), and hope that the hot salsa makes up for the no chilis.

You could serve it without the rolls with the mayo on the side and substitute the salsa for the mango salsa for a different flavor.

Corn Avocado and Tomato Salad

Omit the avocado and top with the guacamole instead. Serve in a lettuce cup.

Save the cheese for another time.
