"snack" credits for lunch at MK, AK, an DHS

We are quickly using up our points on the dxdp with character breakfasts and signature dinners. I'd like to hear some ideas that we can use our "snack" credits as a light lunch in MK, DHS and AK?

We are first timers and not familiar with the snack options that we could utilize as a light lunch in the parks. Thank you for any input!

I've been told at AK the Chicken Fried Rice at Yak & Yeti I think it is is great size for a light lunch!
 
At MK:
Caseys has fries and a side of chili that are both snack credits (my 13yo's personal favorite)
Pinocchios has a side salad
the market in Liberty Square has baked potatoes
In Adventureland there's a cart that has egg rolls
Main Street Bakery has a wide selection of pastries (more breakfasty, I know, but a blueberry muffin is my DD's favorite any time of day)

At AK:
Yak & Yeti CS has chicken fried rice
There's an egg roll cart but I'm not sure exactly where it is
And my personal favorite - the jalapeno cheese stuffed pretzel by the exit of Kali River Rapids

At Studios (without question the most difficult park food-wise):
Rosie's has soup and side salads available with snack credits
We mostly stick to pastries/sweets from Starring Rolls and Writers' Stop

I was going to recommend this as well. This is usually a lunch choice for at least one of us when at AK.
 
I just wanted to say, since you said it is your first time, that you will be totally fine and not to worry! The breakfasts are really filling! We typically get a later breakfast that serves as an early lunch. You could always grab a muffin at your resort, which could hold you over until 10:30 or 11, have the buffet then...and then grab something else light in the afternoon (if you need that).

We've been to Disney many times and have never had a problem filling up on much less than 2 meals and 2 snacks, much less when those 2 meals are buffet/signature meals. Don't sweat it!

I was going to say that many of the character breakfasts are AYCE. I don't know how large of a time frame you have between your meals, but you really might not be that hungry (especially if it is hot outside).

We went in June and ate Tusker House for a later breakfast, had a frozen lemonadge for lunch, and were still not that hungry when we ate at Ohana for dinner (we managed though!)
