Just a side note. You mentioned you wanted to avoid all that peeling.
Wash the potatoes and cover with cold water. Bring to a boil and cook until done (tender). Use a ricer to mash. Place a whole, unpeeled, hot boiled potato in the ricer and simply press. The potato will be extruded and the peel will remain in the ricer. Add milk, butter, cheese, herbs, as you wish to the hot potatoes and stir lightly with a fork. No peeling!
