When I bought my house, a nest was already installed, both the thermostat and a Nest fire alarm on the 2nd floor. I like that I can control the thermostat from my phone. The negative and maybe it was how the previous owners had it set up, but it seems to default to a super low temperature, even after I set it to be a higher temperature. At one point it had scheduled the temperature to be 56 during the night and I had to manually go in and reset it.

I have not had good success with the Nest fire alarm, probably again because of the previous owner...the fire alarm is hard wired on my second floor and I spent almost 3 hours one night trying to get that device onto my Nest App and still have not be successful doing that-the Nest agent was going to send me an additional piece of hardware, but I never received it. Overall with my experience I would not get a Nest product again.

It sounds like you need to go in delete the old schedules. I can override my schedule manually but once I cancel that it goes right back to the schedule that was previously set which is what it’s supposed to do. On the Ecobee you can set a crazy amount of them for an given day. If it were me I’d do a restore to new and start all over rather than try and work around what the previous owner set up.
