Small pies / Fiesta dishes

This is largely a post-Thanksgiving ramble . . .

We really like pies at Thanksgiving, but we don't finish them and they go to waste (otherwise they'd go to waist). I'm thinking of buying a couple of the small Fiesta pie plates so I could make up one recipe and bake it into several small pies, then freeze all but one. Can anyone answer these questions?

1. I looked at the Fiestaware pie plates, and they're available in 6" and 6 3/8". Is one of these sizes "old" and being phased out? I'd rather stick with the newer size (because if I buy more later, I'd want to get the same size), but which is newer?

2. Reviews on Amazon show that these are really small -- one reviewer says 3" across the bottom. Would a standard pie recipe make 3 or 4 small pies? If anyone knows, I'd appreciate help before I buy my pie plates.

3. Are these pie plate the "right size" for a one-serving chicken pot pie?

Any other advice on Fiestaware or baking of small pies is appreciated!
 
I would think that this is bigger than 1 serving for chicken pot pie. 6" across is a large serving.

Here is a site that talks about sizes and ounces. Now I now they are talking about foil tins but the amount that it holds is as important as the inches across.

Figure out how many ounces go into that size and that will give you a better idea of serving per person.

Yes, my initial thought was that a 6" chicken pot pie would be a two-person serving, but then after reading reviews of the product and hearing that it's 3" across the bottom, I'm thinking it's not quite as big as I'd thought.

My goal is to buy the right number of pie pans to make one recipe = my pans. After perusing that website, I'm thinking one recipe will fill four small pans.

The Fiestaware website only offers the 6 3/8" size, so I would assume that's the current size. It holds 14 1/2 oz.

Oddly enough, it's smaller than the "individual casserole," which is what I assume one would use for a single-serving pot pie.

Great! I love being able to see exactly how many ounces each dish holds. Now I'm going to mix up a pumpkin pie ('cause I have all the stuff for that) and measure how many ounces it makes. I'm going to assume that one recipe of pumpkin is about equivalent to one recipe of any other type of pie.
