Usually hard shell corn if I'm eating tacos or tostadas. Fajitas, burritos I like either corn or flour tortillas. At least once a week I make myself what I'm guessing most would call a fajita with chicken, onions and peppers, tomatoes, low fat Mexican blend cheese, avocado and salsa verde. Hubby will have either tacos or burritos on those nights made with beef. I really just take a low carb flour tortilla and load everything in and fold it in half. And it has to be salsa verde, I spent my teen years in New Mexico and its green all the way (if you know, you know).
