Can you still walk into Skipper Canteen?
Do not know the answer to your question bout short notice reservations. I did not particularly enjoy our visit for dinner back in April at the Skipper Canteen, so I would suggest you just "skip" or keep on walking to somewhere different.
I was unsure about making an ADR there when they became available online due to reading very negative reviews from earlier this year but I went ahead and made an ADR for this past Saturday.
My sister and I absolutely loved the food and atmosphere and I have been hearing many other fantastic reviews about it as of late so my guess is that whatever the "issues" were a few months ago have been taken care of so you may want to give it a second chance sometime.
You can make ADR's but you should still be able to get a walk up reservation.
1) Skipper's isn't that great, so FREQUENTLY there are seats available for walk-ups.
2) The ability to usually walk-up for a meal (with the exception of Tuskers) is a sign of a weak eatery.
3) And, Skipper's falls into this category.
4) Let's face it, new eateries are usually jammed at WDW.

I Never listen to Negative reviews about any restaurant anymore, because I held back from eating at some that are now our Families favorites.

I fall somewhere between your take on Skipper and Scupper's. I agree the flavors, herbs, and spices are atypical of most WDW eateries, and that alone is reason enough to try the place. As you say, the food isn't overly exotic, and that's actually why we found the flavor profiles to be slightly lacking--not quite enough punch for our tastes. I do believe the early reviews (which were largely unkind) and the lack of ADRs when Skipper opened hurt business, and I'm not sure they've quite recovered. However, we found the overall experience a solid one, and it's worth checking out just to satisfy one's own curiosity.Fully and completely disagree here.
I at there on Saturday and the food was honestly some of the best I've had at WDW in a long time.
It's not your typical flavored food and that's probably why people shy away but its not overly exotic for my usually plain tastes.
I know that it has gotten a bad wrap but if you look at reviews from a couple different threads that have popped up in the last week most are nothing but positive.
I think it was not a very well advertised restaurant and being walk up only until late June or whenever it changed over did not help the situation.
I challenge you to go there next trip wheather you've already been or not and give it a try.

You can't see the sign unless you are right on top of it. You have to go looking for it. Of course that doesn't explain the lack of ADRs. I'm sure the unusual food scares a lot of people off, especially when you have picky kids.

I agree about not being able to see it, we were there in March and I knew I wanted to try it because everyone hated it and everyone hated the fact that you couldn't make ADRs. I'm a rebel and don't make no stinkin ADRs and go against popular opinion. We walked by it the first time trying to find it,then I had to pull it up on my park map in MDE and almost walked by the it the second time. We enjoyed it, we were there for an early lunch, around 11:45 and it was almost empty.
We loved Skippers both times we ate there last week for lunch and would def. go again.
In fact DD(12) was the one who asked to go the second time~ we did walk up then.
It is very expensive for lunch (we weren't on the dining plan).
We really enjoyed the Arepas both times for appetizer.
First lunch, we got the delicious sustainable fish and flavorful Tastes like Chicken. For dessert the Kungaloosh was excellent but we did not like the consistency of the Quick Sand but we don't really enjoy rice pudding so not sure why DD ordered it ~the sauce was good though so she ate most of it.
Second lunch, noodle bowl with chicken was huge and excellent. However, although tasty, I found the char siu pork had way to much fat in ratio to meat for $24. DD enjoyed the Schweitzer Slush drink.
A table next to us ordered the Whole Fried Fish and although it looked impressive they said it wasn't much meat and difficult to eat.
We requested the same waiter the second lunch Chris ~ he was excellent.
Place was only 1/3 filled both days.
