Single mom with 5 yr old and 6 year old- rides where this is a problem?

I am considering taking my 5 yr old and 6 yr old in June. It will just be the 3 of us. For which rides might this be a problem? I would prefer to put them together and ride in car behind them over putting one with a stranger, but I read somewhere kids younger than 7 ride with an adult. So do they just ride with a stranger- or does that mean we can't ride those rides because there is not an adult guardian for each one?

You're correct that 7 is the cutoff age. I doubt the CM will try and find an adult for you to pair, you're probably better off asking a guest before you get to the ride loading area.

Edit 2: What am I saying, it shouldn't have to be a guardian, they could pair them up with a 14 year old
 
I think with a lot of them they will allow the configuration you are talking about, because the concern is with having a "responsible" person present who can assist the kids in the event of an emergency or evacuation. Where you and the kids are close to each other albeit sitting on separate seats, it may not be an issue. On a ride like Thunder Mountain or 7DMT you would probably be able to assist the kids and maybe even help make sure their restraints are in place, so it might work.

The rules say only that a child under 7 must be accompanied on attractions by a person age 14 or older. However I doubt they will actively seek to pair your child up with a stranger. On some rides, if the child rides alone they may be placed with a single rider or just with someone who is the "odd" person in their group; on the 7 Dwarves mine train, for example, they do try to fill every seat.
