Which Signature Restaurant to Repeat or Le Cellier?

I'll be at WDW Dec 4th-12th on the DxDDP. I had all my ADRs set, until Air Tran decided to cancel my nonstop flight on the 4th. I am now getting into MCO about four hours later, which means I'm now missing my lunch ADR for that day and need to come up with a way to use that credit. I'm going to Universal two days, but otherwise have an early lunch TS and then a late Signature meal every night, (except one dinner I have scheduled for Le Cellier). I'm eating lunch at Brown Derby, and dinners at California Grill, Artist Point, Narcoosee, Citricos, Flying Fish, Yahtsman, and Jiko (all two credits). Rather than waste the credit I was thinking about canceling Le Cellier and repeating one of the Signatures (I have a second ADR for lunch at Le Cellier that week also, so would still get to eat at Le Cellier). I am doing early lunches at Big River Grill, Brown Derby, Yak & Yeti, Le Cellier, Tokyo Dining, GF Cafe, and Via Napoli. I also have another credit left to grab something to take to the airport. Which Signature would you repeat (or would you just keep dinner at Le Cellier and waste the credit)?
 
Hmmmm, that is a tough one. We are not big on repeating meals within our vacation even though we absolutely adore Le Cellier and we really like Yachtsman's and California Grill off of your list. Disney has so many great restaurants to choose from that you don't even have to waist a credit and just do another TS meal. I know this is not the answer you are looking for, but I would go onto the dining page of the DIS or go to allears.net and go to her dining page and look at the different menus and just pick another restaurant. Good luck.
 
I voted for CG but in all honestly, I wouldn't repeat that many meals on my trip. I'd probably repeat 1 or 2. Have you thought about eating at the Wave (Contemporary) or Kona (Poly)? We love both of those restaurants and they are only 1 TS credit.

TS breakfast one day before Universal, or a REALLY late 1-credit TS dinner when you get back from Universal? Are you at a resort that has late-night Pizza delivery? That uses some TS credits.

Are you already using 1 TS credit for a breakfast the morning you leave?

The problem is that with the flight change, instead of arriving for lunch, I'm getting there around 3:30pm. I won't be there in time to use the credit that first day for lunch and have signature meals planned for every night but one. There are no more signature restaurants to choose from. Disney only has eight that are on the DDP and the only one that serves lunch is Brown Derby. I already have ADRs for for all eight signatures, plus a TS for lunch every day I'm at WDW.

Breakfast might be an option. Actually I do have one credit allocated for Maya Grill for breakfast on my second Universal day. I wasn't sure I was going keep it though as I'm not much of a breakfast eater, plus I wanted to get a very early start over to Universal on the days I went. I'm doing a split stay at CSR and Yacht Club, so I could easily do a breakfast on my last day I guess (Captain's Grill maybe?) Leaving off my lunch ADR for that first day, my current ADR list looks like this:

I still need to use up one more credit (two if I don't keep the Maya Grill breakfast ADR), which is why I was thinking about canceling the Le Cellier dinner in favor or repeating a Signature. or I could cancel one of the lunches and repeat Brown Derby.:confused3
