My fiancé and I are Disneymooning this coming September and want to eat at a few of the nicer restaurants. We're considering the Deluxe DDP and would eat at the Signature restaurants, still have a table service which we'd likely use for breakfast, and then have our two snacks as a light lunch.

We haven't decided where we're staying for the week yet. Either we wait to book POR when we see FD come up, and pay the upgrade for the Deluxe DDP, or we rent points for somewhere like a studio at AKV which is cheaper than rack rate for POR, and then purchase the Deluxe DDP out of pocket. I don't know which option is better.

My question is, with Signature... can you order anything you see on the menu online? For example, Narcoossee's has the two pound Maine lobster which is $72.00 - is something like that going to be on the menu and be included in the price of the credit, or do you when on the dining plan, get a separate, smaller menu of the less expensive items to order from?

You can order anything that is on the menu. There is not a "special" DDP menu.

I see you mention waiting for (maybe) free dining, and then if that doesn't happen renting points. You're already within the 7-month window for September, and DVC units are booking up extremely fast, even at AKV.

Free dining for September wasn't announced until late April last year. It may be hard to book DVC for already-chosen dates for September by the end of April, even at AKV. Just be aware of this.

As I mentioned, if we rent DVC we'd be paying OOP for the Deluxe DDP. And we know that FD doesn't usually get announced till end of April. That's why we're figuring out now which route we want to take. If we decide to go the renting DVC route and purchasing the DxDP out of pocket, we'll be sending in a request to DVC rentals tomorrow. If we decide we want to wait it out for POR and see if the FD becomes available, then we wait till end of April. We're leaning toward the DVC renting option so we're in the process of putting a request together.

We do Deluxe with late breakfast/early lunch for 1credit TS and then a dinner at a Signature option for 2credits. Sometimes, we even do two sigs in one day. Hollywood Studios day for example an early lunch at the Brown Derby and then late dinner at Flying Fish. PLus we arrive early on our first day and leave late on our last day. So this helps use up our credits as well. If we are there during Food and Wine, we make sure to double on on Signatures as least one day and then use our snack credits to eat around the festival instead of a formal meal.
 
Don't forget that some entrees at regular table service are around $30-35, so a $70 entree at a two-credit signature is the same value.

I don't think so, its just the lobster that the OP mentioned. I think Bison steak at California Grill is $59 so thats also almost twice a regular table service credit. But in general a signature credit is paying for the more expensive entrees.
