Signature dining experience

My family of 4 is going to WDW in November and its time to make my reservations this week. I have several character meals planned for my daughters. However, I would like to plan one meal especially for my husband -one that he will enjoy. He is not overly picky and he likes steak, seafood, mexican food, and japanese food the most. We are not using the dining plan and my children will be 11 years old. I am trying to decide between Shula's, Flying Fish, Yatchsmans, and Fulton's Crab House. Which restaurant would you choose. Or do you prefer other restaurants? It will be our last night in Disney so location isn't a determining factor. Also, Food quality is more important than atmosphere for this meal. Thanks in advance for your opinions.

Also, i am trying to decide on a dinner another evening. Do prefer Kona Cafe or Chefs de France?
 
Out of your stated choices, imho if he leans steak Shula's. If he leans more towards Seafood Flying Fish(they make a decent steak there too) You can always hit the Tequila Bar in Mexico and Sushi and Sake in Japan if you visit Epcot. Enjoy your trip and wherever you choose to dine.:)
 
DH and I always do Narcoossee's. They have great steak and lobster. Please we always have great service. We eat there on the last night late enough that we can watch the fireworks over MK.
 
We like Yatchman's for the steak, Flying Fish for the fish. We had less than a great meal at Nicoosees. Fulton's has good selections. But we're doing the FF for our Anniversary Dinner this Nov.
 

Definitely go to Flying Fish! It was amazing! And if your DH doesn't end up feeling like fish that night, their steak is excellent. So was their vegetarian entree (Butternut Squash and Goat Cheese Ravioli that night). Seriously, everything we tried there was outstanding.

I've tried Les Chefs and thought it was pretty blech. Like boxed frozen food. Wouldn't spend my time or money there again.

Kona was just ok. Between the two, definitely go with Kona.
 
Flyin Fish..good food very noisy..nice to stroll the BW after or before

Yachtsman...over-rated

Narcooses ( not on your list) our favorite for decent food, great service, location etc..
 
Of the ones your listed, FF is my favorite, but Shula's and Yachtsman Steakhouse are also very good.

But, if this is going to be your only signature dining experience, than I would recommend Jiko (at AKL) or Citricos (at GF), but of which are fabulous.
 
Shula's is in another class and also not on the dining plan (if that matters to you). They are, however, superior cuts and quality to anything you will get from any of the other places.

Our favorite WDW signature is Jiko.

Between Le Chefs and Kona it depends on what you feel like - both are good. Kona has the added bonus of being able to watch Wishes from out on the beach - they play the music and everything and it is a very different perspective from watching it on Main Street.
 
Narcoossee's and Flying Fish Cafe are my two favorite signature restaurants. I also enjoy Yachtsman Steakhouse as well. If he loves steaks, then I would recommend either Flying Fish, because they have a fabulous Char Crusted New York Strip that is out of this world, or of course the Yachtsman. The Ribeye or Porterhouse were so delicious! I also absolutely love the Potato Wrapped Red Snapper at The FF, it is to die for!
