Side dish/Salad for BBQ cookout

Everyone here always has such great ideas so I'm asking for suggestions. We're going to an all day BBQ cookout/day at the lake with other families. I'm looking for ideas to bring for an easy side dish/salad. The typical salads (pasta, green salad, fruit, potato) have already been claimed. Any thoughts are appreciated. Thanks!

We always have beans at our BBQs.

Easy, delicious recipe for sweet and tangy calico beans.


6 slices of bacon, cooked crispy and crumbled
1 lrg onion finely diced and sauted in a little bacon drippings
3/4 cup ketchup
1/2 cup brown sugar
1/4- 1/3 cup apple cider vinegar (I use more, my mom uses less)
Dump in 2 15 oz cans pork n beans - whatever is cheapest/on sale.
add drained:
1 can garbanzo beans
1 can white beans
1 can black beans


Stir and simmer for about an hour or put in the crockpot on low until lunch time.

This is our recipe and we call them Cowboy Beans. I just made this 2 weeks ago and they were the hit of the party. We use 1 Kidney Beans, 1 Butter 1 Beans and Pork N Beans. 1lb of ground chuck to 1/2 lb of bacon.
 
We are going to a bbq this weekend and this is what I'm bringing:

Bob Barker's Summertime Pasta Salad
- taken from Everyday w/Rachael Ray

1 lb tri color fusilli pasta
3 bell peppers (yellow, red, and green), cut into strips
6 ounces grape tomatoes, halved (1 cup)
1/2 C pitted kalamat olives (or black olives) coarsely chopped
1 6.5 oz. jar marinated artichokes, drained and chopped
1 red onion, sliced
2 cloves garlic finely chopped
1/2 C extra virgin olive oil
1/4 C red wine vinegar
1 C packed fresh basil leaves, chopped
1 tsp. lemon juice
italian seasoning
salt and pepper

1. In a large pot of boiling, saleted water, cook the pasta until al dente.
Drain and transfer to a bakin gsheet to cool to room temp. about 10 minutes.

2. Meanwhile, in a large bowl, toss together the bell peppers, tomatoes, olives, artichokes, onion, garlic, oilive oil and vinegar. Add thepasta, basil and lemon juice and toss again. Season to taste with Italian seasoning, salt and pepper.
 

Ever do Apple Snickers Salad?

Freeze some snickers bars (or you can do milky ways, if you have allergies to peanuts)
Dice apples
Break up the candy bars once they're frozen
Mix up in a big bowl with cool whip

DELISH!!!!
 
it is tomato season. Slice them, add fresh basil and a bit of mozzarella, drizzle a bit of extra virgin olive oil, and broil for a minute or two. Really really good, and easy.
 
Tomato Cucumber Salad

Wedge tomatoes, cucumbers peeled, halved, and sliced, sliced onions, and italian dressing. Super easy and delish!
 
cut up broccoli and cauliflower,add in sliced pepperoni and cubed cheddar cheese, pour on italian dressing.
the longer it sits(overnight) the better it is
 
Some great ideas here.....

Another one I do is what my step-mom calls pistachio salad, because she uses lime jello, but I like cherry.....you can use any flavor...

Lg. pkg jello
equal parts cottage cheese and cool whip
small can of drained crushed pineapple.

fold jello (just plain from the box) into cottage cheese and cool whip. When fully mixed add in crushed pineapple. Needs to sit at least two hours, the longer the better. mix again before serving.

Just as a note.....I'm allergic to artificial sweeteners, but have had friends try it with the sugar free jello and I've been told it doesn't settle right.
 
Oh, another one...proscuitto (I know I spelled that wrong) wrapped asparagus lightly brushed with olive oil to place on the grill. I don't even like asparagus, and I love this.
 
Saw this on the Barefoot Contessa and can't wait to make it :)

* 4 pints grape tomatoes, red or mixed colors
* 1 1/2 cups small-diced red onion (2 onions)
* 1/4 cup good white wine vinegar
* 6 tablespoons good olive oil
* 1 tablespoon kosher salt
* 1 teaspoon freshly ground black pepper
* 1/4 cup chopped fresh basil leaves
* 1/4 cup chopped fresh parsley leaves
* 1 1/2 pounds feta cheese

Directions

Cut the tomatoes in half and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, basil, and parsley and toss well. Dice the feta in 1/2 to 3/4-inch cubes, crumbling it as little as possible. Gently fold it into the salad and serve at room temperature.



One of our summer favorites is always taco salad, too. Yum.
 
Don't know if it was already claimed but how about good ol' fashioned cole slaw? I buy the premade mage of veggies. I then add white vinegar, sugar, mayo, salt & Pepper. Yummy!!!!
 
How about taco salad?

1 bag salad
1 lb ground beef or turkey
1 pack taco seasoning mix
1 diced tomato
1 diced green pepper
1/2 can black olives sliced
1/2 diced red onion
8 oz shredded cheese(I use mexican mix or cheddar)
about 1/2 bag of Doritos(original red bag) crumbled up

small bottle of Catalina dressing(California French)


Cook the meat and add taco seasoning, let cool
Combine lettuce, veggies , cheese and meat in a big bowl and toss. Crush up Doritos and add and then add dressing a bit at a time so it's not over dressed. Serve:thumbsup2

Or Buffalo Chicken Dip which people LOVE!

I boile and shred 2 chicken breasts. Mix 1 block of cream cheese, 1 cup of Blue Cheese dressing and 1 cup of Frank's Red Hot. Mix all together with chicken and bake for about 35 minutes. Serve with Scoops.

Broccoli salad

Broccoli -head and stalks(peeled and diced) into bit size pieces
rasins
sunflower seeds
red or purple onion (not sure what they are called) diced fine about 1/4 cup
bacon bits

dressing made of
Mayo
sugar
vinegar

Sorry I don't have the exact amounts I just eyeball it.


a dessert side

can crushed pineapple with the juice
large coolwhip
box of instand pistachio pudding
mini marshmallows
Sprinke of chopped walnuts

Mix it all up except marshmallows. Once mixed add marshmallows.
I usually make it the day ahead (works great) and add extra pineapple juice becasue the marshmallows absorb it.
