Should we park hop in August or NOT? Super confused...

I used to go to WDW like this, but the introduction of FP+ has sure taken a great deal of spontaneity out of a trip. It can be very difficult to re-arrange a plan while you are there, as if it includes going to a new park, or changing the days you are going, good luck getting anything you really want with FP+ during a trip. Possible yes, likely no. That is probably my biggest gripe about FP+ is that any changes in a plan are at a whole different level.
Yep, the excessive need to plan with FP+ is what is stressing me out, along with the fact that there are so many moving parts. So, I am going to plan as much as I can to get the best case scenario..to be in the parks on recommended days with a good touring plan in hand...and, hopefully the PH will help mitigate the fall out if things start falling apart! On the bright side, I am not one who loves Disney dining, so at least I only need to worry about attractions, not restaurants!
 
We will be there for 7 nights. I'm still torn on what to do...if I am reading things right, I can always add the park option on even after we get there? I've either done one or the other in the past so didn't know that was really an option. So, say I have 4 days, and use 2...then decide to add the park hopper option on while we are there for days 3 and 4, I can?

End of August is our usual time for our annual trip - get park hopper. It rains like crazy down there in August, those afternoon gushers. But sometimes it doesn't rain over the entire property - it could be pouring in AK and bone dry at MK. We've been there with a large group, at different parks at the same time, and they'll be saying they're heading out of the park because it is pouring, and we're sweating in the hot sun. We tend to head over to the park that had rain after it clears up. The rain empties out the park :)

Parking hopping is a must for us, as we spend most evenings at MK or EPCOT, and do AK and HS in a three quarter day each. (Although the added stuff at AK will make it a full day, or two half days, and when HS gets done we'll spend more time there.)
